I have visited Steve’s Rib in Edmond on two separate occasions. Both times ordered a pound of brisket to take back to my hotel to enjoy. My recent visit on 1.06.26 I also purchased a larger order of peach cobbler.
The staff was friendly, helpful and delivered great service.
The brisket on my first experience was relatively tender but was lacking in the flavor department. It seemed to have a taste that reminded me of something boiled or has been sitting in water for some time. The BBQ sauce made it better.
I usually will try something at a location at least twice to determine if the first negative experience was just a bad cook or something.
The brisket on my second experience was worse than my first attempt. The slices were tender enough to just fall apart (which isn’t always a bad thing) but again, it lacked flavor that we all enjoy. The BBQ sauce did not help this time. I am a believer that the meat should always taste good by itself and any sauce is just elevating the flavor of the meat. There did not seem to be much for fat content in or on the meat. While there was a little smoke ring, there really wasn’t any bark to the brisket that you would normally have with smoked brisket. This brisket was the worst tasting brisket I have had to the point that part of it was thrown out, something I have never done from a restaurant. I would hope that they take a look at their seasoning, smoking and holding methods to improve the flavor.
The Peach Cobbler was a disappointment. It did not taste like any form of peach cobbler I have ever had. The majority of it was the bread like portion and was very doughy like it was undercooked. Between that and the seasoning in it made it inedible for me even though I tried multiple times. This was also thrown out which is a first for me when it comes to Peach Cobbler.
I can not speak to anything else on the menu but will try a few other meats the next time I’m in town and hopefully those are better than what I have experienced so far.
I think I went there early on Christmas eve and I can’t wait to ho back to get at least 2 pounds of that turkey breast ham
Low key, chill and little foot traffic. Perfect today for just having a place that did not overload with TV’s or loud conversations.

Pulled pork tacos, a little less coleslaw and more meat would be ideal. But great flavor.
