Absolutely fantastic experience at Rosa Mexicano!
Everything from start to finish was perfect — the lobster tacos were out of this world, bursting with flavor and perfectly cooked. The queso was creamy and rich, and the birria tacos were just incredible — juicy, tender, and full of authentic taste.
But what truly made the evening special was the service. Bree and Midalys went above and beyond — warm, attentive, and genuinely friendly. They made us feel so welcome and made sure every detail was just right.

Absolutely amazing dinner! The atmosphere and environment was great and our server James and Quinn were exceptional in their service! We had the Chicken Flautas and Chorizo & chicken empanadas as starters and they were 10/10. For entrees we went with the Chicken Enchiladas and the Mexican fried rice with red chili chicken 10/10 for both as well! Guacamole went so well with all the starters and the entrees. Couldn’t had a better experience here!

There were numerous positives about this restaurant, starting with Solia, our server, who was an absolute delight. She made fresh guacamole tableside, and it was excellent. The chips were fresh and perfectly seasoned, and the salsa was flavorful—a great start to the meal.
I ordered a spicy margarita made with pepper-infused tequila and cucumber. It was refreshing, delicious, and had just the right kick. Not too spicy for me—but if you’re someone who thinks mild salsa is “living dangerously,” choose carefully.
For dinner, we split the chicken fajitas. They weren’t anything spectacular, but they were good—solid, dependable fajitas that got the job done.
The atmosphere was loud and busy, definitely on the energetic side. And the service? Fast. Very fast. Maybe too fast. Blink and your meal might be over before you’ve fully settled into your seat.
Overall, a tasty stop with great guacamole, great drinks, and great service—just don’t expect a long, lingering dining experience.

We stopped here for a quick bite but would have loved to had a full dinner here. The food is excellent! My son ordered the Del Mar & Beef brisket enchiladas combo. He loved the beef brisket enchiladas! I had a glass of wine & table side guacamole. We both thought the guac was fresh & the chips that come to the table are so good! Best fresh tortilla chips I’ve had in a long time. The salsa that comes with chips is fresh but a bit spicy! The atmosphere of the restaurant is very warm yet modern. The service is great & very friendly.

Incredible food and service! Each waiter and waitress was so attentive and have great food suggestions. The chips and salsa at the beginning are delicious. The table side fresh guacamole tastes 10/10. The chile rilleno was the best one I’ve ever had, it was so nice to have veggies and quinoa in addition to the cheese and savory sauce. And the vegan Mexican rice, the waitress was so sweet and let me know the white rice has chicken broth, so she provided vegan Mexican rice on the house. You cannot go wrong with eating here!

This is my favorite hotel in Disney, and this restaurant is the one I visit most often. The food is always great, but what really keeps me coming back is the friendly service.
A special shout-out to Simon, who is exceptionally thoughtful and patient with guests with disabilities. His kindness and professionalism truly make a difference.
Their new desserts are also outstanding—fresh, healthier, and very flavorful.
The restaurant is conveniently located on the lower level of the Dolphin Resort, right at the bottom of the escalator and on the way to the Disney Boardwalk/boat dock. The atmosphere is relaxing and very pleasant.

I’m gonna give the food 3 stars bc the fresh table side guacamole was absolutely delicious. Our dinners although were tasty were cold, not room temp … ice cold. The fajitas are supposed to b sizzling upon arrival, were limp in the pan, again tasty but ice cold. We were the 1st dinner seating mayb as the night goes on they cook fresh? Servers were lovely & atmosphere was delightful. I’d give it mayb 1 more try but tonight was a bust.

This is our second time here since June 2025. The included chips and salsa are delicious (little spicy). This time we got the Cobb and Caesar salad with grilled shrimp. The lettuce was frozen and soaked in dressing, brown, this made the romaine inedible. We expressed our concerns and they acknowledged us. They provided a discount. Staff is super friendly. We wouldn’t probably go back and almost certainly try the table side guacamole that others were getting but would never try the salads here again.

We had such a wonderful experience at Rosa Mexicano in the Dolphin! Our server, **Jordan**, was fantastic — he gave us amazing recommendations, and we especially loved the enchiladas and birria tacos. Everything was flavorful and fresh.
A big shout-out also to **Brendin**, who made our tableside guacamole. Not only was it delicious, but he made the experience so fun. Both Jordan and Brendin truly made our day — we really enjoyed chatting with them and appreciated their warm personalities.
