I’ve eaten at Café Rio over a hundred times and tried all their Denver locations. I was really excited when they opened one in Colorado Springs, since it’s closer to where I live.
One thing I’ve noticed, though, is how often the staff changes. I see new faces almost every time I visit.
I’ve been to this location about a dozen times since it opened, and I always order the same thing the salad. I usually ask for the tortilla extra crispy and have it run through the oven, but only when they’re not busy. This last visit, I asked the same as always, and a guy named Mark with a ponytail said he couldn’t because it might burn then added he’d do it “one last time.” It’s never burned in the past hundred visits, so that was odd.
The salads also tend to have a ton of lettuce but very little meat. How much you get seems to depend on who’s serving that day. I’ve mentioned this to a manager before, but nothing has changed.
I used to really like Café Rio, but the frequent staff turnover, inconsistent portions, and declining ingredient quality have been disappointing. I’ve even gotten wilted lettuce, overcooked chicken, and watched them pour hot beans straight out of plastic bags—not exactly fresh like they claim to be.
I’ll give them another try and hope things improve, but if not, then never again.
Update (Nov 16): I returned today and was pleased to see several improvements. The protein portion is now larger, the ingredients such as the shredded lettuce are noticeably fresher, and the rice is cooked much better, transitioning from previously stiff to now softer and more enjoyable. I hope these changes are permanent rather than temporary. Additionally, the staff appeared more welcoming and accommodating when I requested slight adjustments to my dish .

So excited this location opened up! We used to go to Cafe Rio in Utah. I got the Sweet pork barbacoa bowl. Everything was fresh and tasty like we remembered. Would come here again!

Mostly disappointed in the portion size of the drinks. Normally standard medium drink is at least 14 Oz, a large should be 32 oz. But here their large is just about 8 oz! After all the ice they put in. Since they cram 3 inches of ice in a 4 inch kids sizes cup. Worse is that there’s not a no ice option when ordering online.

My husband and I ordered two of the large Cafe Rio salads. They have always been so good, but today they were disgusting!! The tortilla was supposed to have cheese melted onto it but there was no cheese. The sweet barbacoa pork is always shredded and delicious. This time we each got a baseball sized glob of fat with hardly any pork attached! Just a glob in the salad. The lettuce in both salads was old and slimy! And last but not least the cilantro wasn’t even chopped up. It was thrown into the salads in long strands!! Worst $50 delivery meal we have EVER gotten! Straight into the garbage because we were actually afraid of getting sick.

I am giving 5 stars because we had a very nice experience. The employees were so attentive and excited about making everyone feel welcome. The music was a bit loud but I think they were trying to fix it. There is nice seating outside. The inside was beautiful.
We were surprised that a bean and cheese burrito was $16 but the ingredients are fresh. That may explain. The freshness matters to us.

We enjoyed eating at Cafe Rio often when we lived in Utah. When we moved to Colorado recently we were thrilled to see that they have a new Cafe Rio!!! The food was just as delicious as we remembered (especially their sweet pork enchiladas and horchata!). Their customer service was so kind and generous. The best we’ve experienced at a restaurant in recent memory! Highly recommended!!!

Food is good, great flavors. The portion size however, is so bad. The bowls are tiny and they don’t fill it up. The drinks are good. The service speed varies, sometimes it takes forever to get your food even with ordering ahead and sometimes they have it ready if I order 20 min ahead.

We have come every week since it’s opened! We’ve had great experiences most of the time which is why I’m still giving 4 stars. My husband and I picked up sweet pork salads this week and when we opened them at home they were almost inedible. I had to scrap the soggy rotton salad off and chop up my own fresh lettuce. I’m not sure how anyone made this and thought it looked okay to send out.

The bowl says u can have up to 5 toppings. I asked for the 5 but did I get that, no, no I didn’t. I got what looked like a few droplets of sour cream but couldn’t tell and since that would be hard to miss by all rights I got none, nor did I get cheese.
Cheap any? Yes you are Rio Cafe, I’ll just stick to Chipotle, they have always filled my bowl with everything I’ve asked for…but not you, so I won’t order your bowl again

Staff was seemed really into their jobs – great comrodery! The portions were large especially for the price. Unfortunately the quality was pretty mediocre. Although nearly everything was fresh. If your looking for large portions at a reasonable price you can’t go wrong here.
