We had the artichoke dip and the shrimp poboy. Both were really good! I’m not sure what made the artichoke dip Cajun but either way, it was still good. The owner introduced himself and made suggestions. We are kicking ourselves for not trying the gator.

Had the Red snapper, catfish basket, and the fries. Refreshing change of pace from the regular BBQ and standard American food. Everything Louisiana you can imagine including: Boudin Balls, Shrimo Remoulade, a list of Po Boys, two gumbos and some peach cobbler to finish the meal.

Outstanding. I don’t know anything about Louisiana food or even exactly what a po boy is, but I freaking like it. The garnishments IE lettuce and tomato, onion we’re notably fresh. The french fries we’re perfectly cooked-fried crispy and still fluffy on the inside like mashed potatoes amd seasoned extremely well, additionally was not a small portion. The bun toasted perfectly, just to be light enough to resist being soaked with the mayor or the dressing but not so much that it’s crunchy and hard enough to cut the roof of your mouth, the burger patty was cooked to a medium, maybe medium well, a little too far from my personal liking but didn’t interfere with the overall meal consistently moist throughout the entire time of eating.. The service was adequate and friendly and just as attentive as any to go order server/bar tender should be. Overall, service was accommodating since I asked for something that is not on your menu or offered with my meal. That being the jalapenos. I paid $14 for the meal total which Maybe might be a little bit up there in price but I would certainly pay it again and I plan to in the future. The overall cleanliness and condition of the restaurant upon first appearance was clean and tidy as well as uncluttered and reasonably spacious. I am very happy with this new addition of restaurant to Meeker. I welcome Carolinas Louisiana’s kitchen, and I highly recommend it

I really wanted to like this place, looking forward to trying it since I heard a Louisiana restaurant opened in Meeker several months ago. Our experience was probably one of the worst meals we had ever had.
When I walked in, the dining room looked uninviting with the seats facing the 2 bathrooms with open doors with a full view of the toilets so I opted for the bar area. When we sat down, we noticed the table was not wiped clean from the previous diner, so we asked the waitress to wipe it down.
The catfish was not good. It appeared to be pre-breaded frozen catfish. One piece was grayish black and tasted really bad. The breading was very heavy and one piece had only 1/4″ thick piece of catfish under the breading. The tartar sauce came in a little packet from Kraft.
The seafood gumbo was not great either. I had to send it back as it was lukewarm. The shrimp tasted old. The roux was quite tasteless, even after adding pepper, salt and hot sauce. The bread was not only stale, it tasted like low quality store bought white bread which I did not eat.
We have eaten in South Louisiana many times and know how great the food down there can be.
My husband got indigestion after the meal. We would never return.

Very disappointed. The reviews did not come close to my experience. It was very slow, one other table. Ordered cups of jambalaya, etouffee and gumbo. Also ordered loaf of bread. When food came, all the cups had bread. It did not say bread included on menu. When waitress brought bread we said we really didn’t need it since bread came with it. (Would have been nice if she told us when we ordered bread came with the sides.) She made sure we understood the bread was just going to be thrown away. She would just be wasting it. I said fine leave it. We never touched it and we were charged for it. The jambalaya was like sticky rice, mostly rice. It was barely warm. Thought maybe because it was not warm, it might be better if we sent it back. Was informed by waitress again it was going to be thrown in the trash, (not my problem it wasn’t good). The second cup was the same way. It was such poor quality, never ate it, yet we were charged for it. Mac and cheese was ok. Gumbo decent. Waitress great at making you feel guilty, didn’t need desert! Came from out of town, it was not worth the drive.

THURSDAY NIGHT SPECIAL IS TO DIE FOR! Ribeye steak parmesan crusted potato wedges and crawfish seasoned corn on the cob. Best steak I’ve ever had great environment smiling faces. Oh and don’t forget the peach cobbler also the best I’ve ever had. Price is very good for the absolute delicious food you receive.

I can’t speak to the Louisiana/Cajun food, because I got the ribeye daily special, but let me tell you, my meal was impeccable!!! My steak was cooked perfectly to order, the sides were amazing, and it was a lot of food. One of the few places in Meeker that is open later for dinner, but Caroline’s is a true gem! Yum yum get ya some!

Easily the best, most authentic red beans & rice on the western slope in my opinion. Ingredients (packed with flavor) were fresh. Food was delivered to our table in a timely manner. The gal that took our order clearly loves her job and was on point our entire visit. If you havnt tried this place yet, do it. 100% worth a drive. ☆☆☆☆☆

It’s rare to find an establishment in Colorado that meets my expectations for home cooked cuisine. I started with the seafood gumbo. The flavor was right on par. The side of French bread (which I was expecting to be some standard store bought hoagie bun) was I believe made in house which is a staple of new orleans food! I also had the catfish basket. I held the fries so as to not spoil any room for trying everything on the menu. At first glance I could have sworn we were in Breaux bridge at Poches. The catfish was flaky and perfectly fried! The cocktail sauce was right on for how I prepare my own. I also inhaled a shrimp po’ boy which was also on a home made French bread. Being were in Colorado I did not expect the traditional amount of shrimp falling off, however there were still a sufficient amount! Dressed is a term we use for how to prepare our po’ boys in Louisiana. Not a term often used in faux cajun establishments. I had to cap it all off with the bread pudding which had a perfect sponge. Great praline sauce, and just the right amount of ice cream on the side! Finally I had the “hurricane”, it was not the traditional mix and prep for a hurricane. I suspect I actually got a salty dog. Not bad in fact I was feeling no pain afterward and would order another in the future.
As our country is ever evolving its great to see the cajun tradition will live on in colorado! Thank you chef, dining in was my pleasure!

We were here from out of town. Florida to be exact. Such a friendly atmosphere. Everyone was so nice. Food was amazing and unique for the area. Now that Bartender was on top of it. Kept the drinks flowing with a friendly smile and great attitude. Really seemed to enjoy what she does. Highly recommend if you are in this cute little town
