Situé dans bâtisse du XVIIème de l’hôtel la Tour d’Auxois***: une véritable expérience bistrot, « Loiseau du Morvan », elle s’attache à proposer une cuisine du marché locale et accessible à tous. Conviviale et généreuse elle fait honneur au terroir et aux classiques régionaux tels que les œufs en meurette ou encore la volaille Gaston Gérard. Deux signatures de nos Bistrots (comme à Beaune et Besançon) seront au rendez-vous : l’oenothèque en chêne mouluré proposant les vins au verre, et le chariot de desserts signé par la pâtisserie de la Côte d’Or (située en face). We had made reservation for lunch at this bistro in advance but made the mistake of not confirming our reservation again near the date of booking even though we did receive an automated email. When we arrived, the hostess did not have a table for us and even though the fault was entirely ours, she immediately called a colleague to assist us and made arrangements to have a table for us at the next availability. And to accommodate us, the restaurant had one of the managers take us to a beautiful seating area on the hotel side and brought us complimentary drinks and refreshments while we waited. The manager checked in on us to make sure we were doing fine and when our table was ready, he personally escorted us back to the dining room. The hospitality of the staff was quite above and beyond what I’d expected and I would give them 6 stars out of 5 if I could on that alone. The meal started off with what we thought was the bread service but turns out to be more of an amuse bouche. It looked deceptively like an ordinary piece of bread but was incredibly light, airy and cheesy and I could’ve eaten a whole basket of it. The squash bisque, the chicken terrine, the pork chop and the beef were all perfectly executed and accompanied with seasonal ingredients. The berry eclair like dessert turns out to be multi-layered and was light and refreshing. After the meal we even took a short walk in the garden area just outside the restaurant as we relived the experience and good fortune. My advice, definitely make time for a meal at this restaurant if you are in Saulieu but don’t ignore the confirmation on purpose hoping you’d get the special treatment like we did! Salut!

The main asset of this bistro is the location, in a beautiful garden with the view on the city’s church. For the dinner, it’s nice but a little bit disappointing considering the few options you have on the menu, and the portion size. The two deserts are very good.

Really lack luster food and service. They forgot about our booking. The service was not at all attentive, and the food was bland and badly cooked. One of our friends who is pregnant had to send her burger back two times because they kept trying to service it to her blue rare which is horrendously dangerous.

We visited the restaurant when it was across the road several times and it feels like the new locale is a downgrade. The tables are too close together in the main room which impacts privacy and atmosphere. The food was ok, not as memorable as from the kitchen across the road. We will come back some time, but hopefully they pull the standards up to the previous level.

Cadre très agréable. Superbe moment passé au bistrot Loiseau du Morvan. Nous y avons déjeuné et pris le menu du marché accompagnant le SPA Bernard Loiseau où nous avons passé deux heures de pur bonheur intense juste avant. Nous nous sommes régalés avec un gaspacho de melon basilic, à tomber, suivi d’un lieu noir sauce au beurre mandariné avec ses petits légumes poêlés et un effiloché de boeuf sur purée champignons, assiette de trois fromages et en dessert un délicieux fraisier sur lit de génoise coco. Tout était excellent accompagné de superbes vins. Le personnel très professionnel et au petit soin, service parfait.
