March 15, 2025—5 PM, stomach rumbling like an old pickup on its last leg, I roll up to Hipshots BBQ in Borger, guided by whispers of smoky, meat-laden greatness. You ever get that sixth sense when you approach a BBQ joint, that deep-down knowledge that you’re about to enter holy ground? That was the vibe. Rustic, rough-cut wood, neon beer signs humming like a choir, and enough John Wayne memorabilia to make you feel like The Duke himself might saunter in and order a brisket plate.
But here’s the kicker—they were out of meat. Sold out. Gone. Vanished like my last paycheck. Now, in the world of BBQ, that’s usually the ultimate green flag. You don’t want to eat at a place that has too much meat left at the end of the day. That’s how you end up chewing on something with the texture of an old boot. So, yeah, I get it. It’s a good sign. But also… damn.
The place looks like it could deliver a religious BBQ experience. But looks can be deceiving, can’t they? Like a con artist in a tailored suit or throwing syrup on a dog turd and calling it breakfast. I’ve been burned before. Decor don’t mean squat if the food ain’t up to par. But, to be fair, I can’t judge what I didn’t eat.
So, for now, Hipshots BBQ gets a neutral 3 stars. No meat, no meal, no hard feelings. If I get a shot before I skip town, I’ll update accordingly.
For now, Hipshots remains a mystery—Schrödinger’s brisket.

We loved it! The food was delicious. The proportions were generous. The prices are reasonable. Super clean . There’s plenty of parking in the back. And an entrance to the restaurant to enter from the back. Will definitely be back and tell everyone I know about this place. We had the Johnny Ringo and Calamity Jane. And we had plenty of leftovers to take home.

I finally try the food every Texan recommends, which is Texas BBQ. I totally agree with these people. It tastes so great! The bean is pretty special to me, and the meat with the sauce which light up the whole dishes is (OMG) perfect.
Furthermore, there are so many tea to choose, and also the soda thing that always exist.
Additionally, I do like its decoration.

Service was fast and staff was friendly. You fix your own drink and the staff calls your name to pick up your food. Restaurant was clean and tidy. Large variety of flavored teas. Overall great trip. Look, darling! It’s Johnny Ringo.

We purchased burgers , fries, onion rings, and sweet tea. It was all tasty. They even fried us up two extra patties for our puppup that we purchased. They are very friendly and we received great service.

Heard about this place from some other tradesmen on a job and decided to try it out. I ordered the Boomtown Burrito and it was more than filling. It’s loaded with meats,beans, potatoes,and fritos and smothered in cheese. Definitely worth the $15 for it. The “Actually Hot” BBQ sauce was perfectly tangy and spicy,and really compliments the meat. The tea was good,but in my opinion could be sweeter. There are plenty of options for flavored teas,both sweet and unsweetened. Will be back again as soon as I can.

I ordered the 3 meat plate with cole slaw and potatoes. From 1-10 with 10 being excellent, the chicken was a 7, the ribs were a 6 and the brisket (maybe it was roast) was a 1. Definitely not sliced brisket. The young ladies and gentlemen were nice.
