I recently tried Cowboy Tacos Food Truck (XC Meet), and let me just say—the food itself was absolutely worth it. The quesadilla I ordered was amazing: delicious, full of flavor, and clearly made with fresh ingredients. Every bite packed a punch, and it’s the kind of food that makes you want to come back for more.
That being said, the service didn’t quite match the quality of the food. Even though the truck wasn’t busy at the time, the service felt slow, and the employees seemed a bit scattered and unsure of what needed to be done. It didn’t ruin the experience, but it was noticeable.
Overall, I’d definitely go back for the food because it was outstanding, but I hope they tighten up their service to match the level of their flavors.

Coming all the way from Wisconsin wouldn’t miss this stop ever! Best tacos! Lovely owners! Food was ready almost instantly! Would recommend to anyone everyone
