This restaurant is a lot of fun and a perfect fit for the Fairplay area. The appetizers are great. We’ve been twice now and have had the shishito peppers, the queso, and the beans and all were top tier, especially the peppers. For entrees we shared the burger and the fried chicken. The burger was great, and the fries chucked was outstanding. It’s something we normally would not order but a comment from a great server (Joey) convinced us and wow is it great. The breading is incredibly flavorful. The blackberry margarita is super good as are the other house cocktails. I didn’t order a tequila/mescal flight however I am familiar with most of the ones they carry and they are all good lineups. The staff are all very friendly and fun and knowledgeable about the menu. We will for sure take our friends and family when they visit.

We enjoyed a late lunch/early dinner on Valentine’s Day and could not have been happier with everything! The food specials were delicious, drinks were great and service was top notch. We’ll definitely be back for a regular lunch or dinner, would highly recommend supporting our local businesses!

What a wonderful place with a great vibe! We were a table of 4 tonight visiting from Ohio and Texas, and had NO idea this wonderful place had just opened up 2 weeks ago! Our waiter was Bradford, and he was excellent at his job! The place had such a great vibe! We really did not know what to expect, but the food and presentation were outstanding! The only bad thing is that we live so far away so we can’t be regulars! We all highly recommend this place!

Great experience and food! First time eating here and really happy! Will be back! We are locals and usually have to drive to Breckenridge for a fine dining experience. Wonderful food. Highly recommend the burger and short rib. Also had the hot cocoa with tequila, it was like a warm hug on a cold night. Great service as well!!

We visited this restaurant shortly after it opened (about three weeks in), and it was a great experience. The interior has a fantastic vibe—warm, inviting, and thoughtfully designed. The service was wonderful from start to finish, and the menu offered a great selection of well-prepared dishes. We had one minor issue with an order, but it was handled immediately and even removed from our check, which we really appreciated. Overall, an excellent experience. We would highly recommend it and are already looking forward to our next visit.

We had an amazing meal here. We shared the shishito peppers and corn soup. Both wonderful, a chicken dish for our main course that was very flavorful with a few sauce options. The star of my meal was the fried ice cream! Can not miss 🙂

We’ve given Colorado Cantina a few tries since they opened, hoping each visit might bring some improvement — but unfortunately, my experience on New Year’s Eve confirmed that this place still has a long way to go.
The evening was nothing short of chaotic. There was only one server working the entire dining room, clearly overwhelmed and doing his best, but understandably unable to keep up. Meanwhile, the owner spent most of the night avoiding contact with customers and staff alike. It’s one thing to own a restaurant, but quite another to actually run one — when your team is drowning, you jump in to help. Stacking a few plates and refilling water carafes doesn’t count as leadership.
After a 45-minute wait, we finally learned our food order had never even been sent to the kitchen. Over an hour later we got our food and not impressed. Mistakes can happen, of course, but this level of disorganization points to deeper management issues.
I understand Colorado Cantina is still fairly new and that growing pains are expected. They do have a few staff members with real hospitality experience — hopefully the owners will start relying on their expertise to get things on track. For now, though, the best way to describe this cantina is potential that’s being squandered by inexperienced owners.

Great staff, great cocktails, great food. We are excited to have a solid locals spot in FairPlay. Loved the vibe. The bartenders were awesome and attentive and all of the food was well curated. We will definitely be back
