❤️ A Thank You From BoxCar Bistro To everyone who ever stepped up to the window, shared a laugh, tried something new, or simply waved as you passed by—thank you. BoxCar Bistro has always been more than a food truck. It’s been a little pocket of creativity, community, and connection, and you helped build that with every visit, every conversation, and every moment of kindness. After a lot of reflection, I’ve made the difficult decision to close BoxCar Bistro indefinitely. This isn’t goodbye forever—just a long pause while I regroup, breathe, and figure out what the next chapter looks like. I’m deeply grateful for your support, your patience. Til we meet again. This is definitely worth a repeat! Great portions and tasty as all get out! I had the train wreck and a caramel cream Italian soda, extremely happy I tried this place! Edited to add that I tried a different sandwich today and it did not disappoint! Ham and Swiss on sourdough… Delicious doesn’t explain how amazing it was, and it was huge! Looking forward to giving another one a try next time!

Boxcar Bistro is THE PLACE TO EAT when you find yourself in the Boise/Nampa area! The sandwiches we enjoyed today were SO FLAVORFUL and far superior to sandwiches you’ll find anywhere else! Every ingredient was top-notch, from the meats and cheese to the bread.
We got there just before the lunch rush. People love this place! I’m so glad we stopped for lunch at the Boxcar Bistro in Nampa, Idaho today.
After the lunch rush, we were able to talk to the owner, Jenn Thacker. This business has grown from a dream in 2018 to a successful dream-come-true today! Way to go Jenn!
Please excuse the red hue of the sandwich photos. I forgot that sitting under a red umbrella would do that to my photos. Oops! Look at that stack of deliciousness on the Boxcar Bistro’s signature rye bread though! Yum!

BoxCar Bistro!!!! We were looking for breakfast food and the grilled cheese & breakfast options drove us to drive by. Great place for breakfast or a tasty sandwich made fresh. The owners Jen is super friendly and was so wonderful to explain the options. Which there are many. She has 4-5 cheeses plus the normal meal/deli choices and several breads plus a croissant (for $1 more). She is hardworking and tried to get our custom order of 4 out in 15-20min (it’s NOT a drive through so if you are pressed for time it’s not going to work)… It did give us a moment to sit and relax (tenet and chairs are adjacent to the food truck). She has 6-7 sauces available and great flavors to choose from. Breakfast can run you about $6-8 and sandwiches are more around $14-17 (please see picture of menu for specific sandwiches). Note: Google doesn’t tell you which side (left or right on the street; it’s just in the middle)… but it’s directly across the street (opposite side) from “American Construction Supply & Rental.”

If you haven’t had the Monte Cristo at BoxCar Bistro in Nampa, you’re seriously missing out. This sandwich is a masterpiece—baked chicken and deli ham layered with Swiss cheese, tangy bistro sauce, and stone-ground mustard, all nestled between slices of white bread. Then, it’s dipped in French toast batter, cooked to golden perfection, dusted with powdered sugar, and served with a side of seedless berry spread. The combination of savory and sweet is absolutely divine .

Delicious. I’m so glad I took photos before I started or there would be none. Great customer service. Delicious sandwiches. This one is the train wreck hold the peppers. What was absolutely amazing was the chips, thick and delicious. About half way through I decided to try dipping one in the adjus. Oh my. Delicious. I may have a hard time trying others. They have extended hours Friday and Saturday till 8. Most food trucks in Nampa or only open a short time time midday. Go give Boxcar Bistro a try.

Boxcar Bistro is now located at Primary Electric or 324 2nd Street South in Nampa (right nextdoor to the Dermatology Center).
I honestly have never had a bad meal from this place! The Italian Traveler (pictured below) is our absolute favorite, and you can never go wrong with her spicy lime white cheddar chips on the side (also pictured below). You can order whole and half servings of all sandwiches on the menu. Everything is always super fresh and made to order!
Jenn knows what she’s doing with all of the amazing flavor combinations. She’s got hot sandwiches, cold sandwiches, kid’s sandwiches, and even some breakfast sandwiches. She also serves amazing coffee drinks, Italian sodas and cream sodas, along with BUTTERBEER! The woman even has a MONTE CRISTO sandwich on her menu. IYKYK She also caters AND bakes cakes.
If you love gourmet sandwiches, and want to visit flavortown (Guy Fieri needs to stop by in my humble opinion), you should really go see her at the BoxCar! Even If you like your sandwiches simple, she can do those too! you can customize a lot AND she’s also on DOORDASH!!

I have been wanting to try this place for a while but finally had the opportunity to! The food was absolutely amazing, and the sandwich portion was impressive. Jenn was such a very happy person and a blessing. Everything was very clean. I can wait to go back and try the other sandwiches!

Fun fact, the owner of this food truck also has some serious baking skills! We had a last minute cancellation for our caterer for a work celebration and she willingly made 60 specialty cupcakes for us with just 24 hours notice. Excellent customer service, amazing quality, unbelievable presentation!
