Chimbolo Mexican Restaurant was founded in 2024 in Cowan, TN. Chimbolo is the spanish nickname of the owner’s son, who is the inspiration for our business name and logo. We are a family-run business selling tasty tacos, quesadillas, enchiladas and, of course, delicious chips & queso to the Cowan community. Give us a try, and leave a review if our food made you smile!

Our family moved to Winchester in July of this year. We were in search of a good authentic mexican restaurant and we have tried several in the area. Chimbolo has become our favorite for the good food, service, and reasonable prices. Their standard salsa is pretty mild, but just ask and they have other options with more heat and flavor if that’s what you like. The green jalepeno salsa is awesome! If you like spicy, I recommend trying the Molcajete. My wife and I share it and add the shrimp as an option. It fills us both up with beef, chicken, shrimp, chorizo, onions, peppers, and cactus. All served in a Molcajete bowl with a spicy sauce. Absolutely delicious. Get the $3.99 margarita and all is good. Give them a try.

We really wanted to love this place, but overall the food just didn’t deliver on flavor. Everything tasted quite bland—especially the salsa, which lacked spice and honestly reminded us more of tomato juice with a little onion and cilantro than a traditional salsa.
That said, the frozen margaritas were excellent—cold, flavorful, and refreshing. Also, the staff was very friendly and made us feel welcome, which we appreciated.
If you’re just looking for a chill spot with good drinks and friendly service, this might work for you. But if you’re coming specifically for bold Mexican flavors, it might fall short.

What a delight Chimbolo Restaurant is! The margarita is always the test, and the classic lime margarita on the rocks was terrific!
While we were waiting for our margaritas, they brought us chips and salsa… the house salsa was a bit mild, so we asked if they had anything spicier and she brought two delicious alternatives… one green and one red and both were fabulous! The server was very nice and the ambience was cozy.
We can’t wait to try more things here. What’s even more fantastic is they have vegetarian things on the menu!
