Every member of the team is focused on making sure you have an outstanding time, and it shows in every detail.
The fish is unbelievably fresh—each bite melts in your mouth and highlights the care that goes into sourcing top-quality ingredients. The presentation is equally impressive: clean, elegant, and artful without being overdone.
But what truly sets this place apart is Chef TK. His passion and skill shine through in every piece he creates. Whether it’s a perfectly balanced nigiri or one of his inventive signature rolls, Chef TK goes above and beyond to make every plate memorable. He takes time to engage with guests, explain the flavors, and even craft special off-menu bites that showcase his creativity.
It’s rare to find a restaurant that delivers on every level—food, service, and atmosphere—but this one does it effortlessly. After my first visit, I can confidently say this is my new favorite sushi spot in Colorado. If you appreciate amazing sushi and genuine hospitality, do yourself a favor and stop in here.

Had the 7-samurai, wonton soup, orange chicken. Everything is absolutely perfect. I have never had anything less than perfect here.

Ito Sushi serves some of the freshest fish I’ve ever had — every piece was flavorful and beautifully balanced. The staff were incredibly friendly and made me feel so welcome. Our very favorite place for sushi, Chinese, Japanese and Thai! The best part is it’s right around the corner from us in the Meadows. Food is consistently delicious and such a wide variety! So happy to have them in the neighborhood.! Today we opted for the never say never roll and the Maine lobster roll!

The staff is one of my favorite parts of Ito Sushi! We went for a birthday dinner and indulged more than we normally would but I have zero regrets. The chef’s choice sashimi is an excellent choice to try things you wouldn’t normally try on your own and I think their spicy tuna roll might be my favorite version of a simple basic roll. 10/10 will absolutely be returning!

Every time we visit, the food is fast and delicious. We brought our baby for her first birthday dinner out and she made a mess. When we tried to clean it up our server was so kind and adamant that it wasn’t a problem and he’d take care of it. Thank you for your kindness!

The best is an understatement! This food is perfection!! The service is amazing especially our AWESOME server Tim, who remembered us the one other time we came (2 months ago). So sweet, easy going, attentive and recommended yummy dishes. The place is beautifully decorated with hand painted images, handmade decor and feels cozy. Had a great time at Ito Sushi yesterday. Service was wonderful with plenty of genuine smiles and assistance with plates change when we wanted another clean plate so the taste of rolls was not affected by the previous alacarte creamy dishes we had enjoyed.
The place was clean and feels fresh. We requested to be seated near a power outlet to recharge our phones and were promptly ushered to the corner seats which gave us a lot of privacy and great view of the restaurant. We looked the contemporary fusion vibe of the place, with its American pop music, and mix of bold Japanese and Chinese decor. Particular love the fish lanterns.
Food was surprisingly good especially the innovative sushi rolls. We ordered 5 rolls from the ordering sheet, and 2 ala carte items from the appetizers/sides menu. We particularly enjoyed the waygu beef， Denver Bomb and Wasabi Crunch! The fried calamari was disappointing though as it was too overly fried so they were terribly chewy tough.
We were there from around 3pm and left around 5:30pm. As there was no dinner rush yet, the host and servers were very gracious, allowing our party of 4 to chit chat and catch up. Often checking on us if we need refills of water.
I will recommend this restaurant to the Castle Rock residents for sure!

Ito Sushi Asian Bistro is the best sushi restaurant around Castle Rock. If you like sushi, I would recommend you to try their omakase. You will be surprised how fresh the fish is and the creativity of the dishes. All chefs are well-experienced and professional. The atmosphere of the restaurant is also good. This is a great restaurant to have dinner with friends, family and dates!
