The food was exceptional from start to finish. The Miso Glazed Chilean Sea Bass was outstanding perfectly prepared and paired with a silky cauliflower purée, sautéed spinach, roasted tomato, and a delicate coconut curry sauce that brought incredible depth of flavor. We also enjoyed the Ceviche of Corvina, vibrant with Persian lime, Peruvian corn, red onion, ají amarillo, cilantro, and sweet potato frite a true standout. The Cavatelli with Scallops was delicious with shallots, tomato, shiitake mushrooms, and truffle butter, and the P.E.I. Mussels were served in a flavorful Pernod fennel broth with grape tomatoes, basil, and shallots. Our table loved the escargot as well, along with the fresh bread and signature dip.
The service was friendly and welcoming, and the bar had such a great energy with engaging people all around. A special highlight of the night was the live music the vocalist was incredibly talented, with a dynamic range that truly elevated the entire experience.

Upon arrival, we waited several minutes before being greeted by the hostess. Live music was underway—a pleasant touch for ambiance, though perhaps less ideal for a dining environment where conversation is part of the experience. We requested outdoor seating, which appeared to require some adjustment by the staff; the request seemed to inconvenience the hostess slightly as a table needed to be prepared.
After being seated, there was another wait of roughly ten minutes before meeting our server. While the restaurant appeared adequately staffed, the overall service flow felt somewhat disorganized, creating an atmosphere that bordered on chaotic. Fortunately, our server Jimmy proved to be a bright spot—personable, attentive once engaged, and helpful with our selections.
Cocktails arrived promptly and were well prepared. Our appetizers—eggplant rollatini and shrimp cocktail—followed quickly and were both quite good, offering the strongest culinary moments of the evening. However, service lapses continued when we then had to wait several additional minutes to receive table settings necessary to actually enjoy the dishes.
The entrées were satisfactory but ultimately unremarkable. My ribeye was acceptable though lacking the depth and execution expected at this price point, and my wife’s seafood salad delivered a similar “good but not memorable” impression.
Overall, the experience landed somewhere between good and merely adequate: solid appetizers, competent drinks, but uneven service and an overall atmosphere that felt somewhat disjointed. With many excellent dining options available throughout the Bonita Springs area, Aqua may struggle to rise to the top of the rotation. For us, it will likely remain a one-time visit.
With this said, we were kindly seated when we intentionally showed up for our 5:45 PM reservation and were served with expediency, helpfulness, and kindness within the first 5 minutes since the happy hour was going to be concluding within a few short minutes—which we knew.
Our server got our order taken care of in record time and with kindness and an amazing comforting demeanor and resting assured we would be taken care of.
Over all, the Happy Hour (HH) Old Fashioned and Gin Martini we respectively ordered were average at best but were not a surprise for $9 each. I (James) am a mixologist and these cocktails were simple, “Well”bartender basic cocktails. Don’t expect a CRAFT cocktail that wows your senses for this HH.
Every HH food item we ordered without exception had a 4 to 5 star presentation! Beautiful.
The Grilled Caesar Salad and the Shrimp taco were definitely the best crafted food items out of five food items we ordered.
The crab salad stuffed in the avocado was just average and too sweet and too “mayonaisee.”
For the caliber of quality and exceptionalism that the presentation that the stuffed avocado seemed to want to achieve, the crab salad was likely created for those who are going to like more of a grocery store deli crab salad.
Katherine is an EXPERT, Texas-based Grill Master and literally makes the Best Center Cut Filet Mignon I have had throughout the entire USA. Both of us thought the Filet skewer was still cooked beyond the desired Medium Rare and lacked necessary and even simple salt and pepper / spice presence and or levels along with a couple other expert marinade moves.
The crabcake was a good value for the HH and a generous size, and I liked it more than Katherine. Yes, we agreed it’s a bit sweet . . . and had a bit higher ratio of breading in proportion to the crab presence.
Whoever designed the Shrimp Taco was apparently in their wheelhouse and nearly perfected it. Delicious and more exceptional.
The grilled Romaine along with the anchovies made it a TRUE Caesar salad and was Katherine’s favorite item out of all we had.
Overall, Katherine was not wowed by anything and I saw the potential, but yes, with more refinement necessary.
Katherine and I both agreed that this Aqua still has the old Perkins feel. The room we sat in still had the shape and remnants from a 1980 Pop in Fresh, Perkins, Baker’s Square, …you get the picture. We can see that the owners tried to convert the previous restaurant into a nicer establishment and portions are decent, but overall it was like putting lipstick on a Perkins.
The entire staff was friendly, hospitable, and made us feel welcome. Katherine has a couple legitimate serious critiques concerning some observed etiquette to share with the owners but will express them through private messaging if they reach out.

My wife, Katherine, who is a very respectful and loving person, just shared that the entertainment on the little stage sounded like an off strip Las Vegas lounge show. I don’t know if Bonita Springs is ready for that..
Once seated, our waitress apparently enrolled us in some kind of dining endurance challenge — a test of how long two adults could survive at a table before making eye contact with their server. Spoiler: it’s a long time. By the time she materialized to refill my iced tea, I had already finished my meal, contemplated my life choices, and accepted my thirst as a permanent condition.
And the food! The pièce de résistance — a saku block of tuna. Forty. Dollars. Now, I have enormous respect for saku block… at the neighborhood sushi spot where it belongs, priced accordingly. Here, it arrived dressed up in fine dining clothing with absolutely nothing to justify the ticket price. Bold move, Aqua Bonita.
The cherry on top? On our way out, we caught the hostess at her station engaged in what I can only describe as some serious personal grooming — eyebrow maintenance, mid-shift, in full view of departing guests. Dedication to self-care, I suppose.
Not busy for a Friday night. I wonder why.
