Finally found some great Mexican food in the Springs. Not the standard whitewashed nonsense that you’d typically find.
Sotelo’s is the only place in the Springs that serves authentic Al Pastor. It’s actually cooked on a vertical rotisserie in a traditional Shepherd’s Pork style just like when the recipe was developed in Puebla, Mexico in the early 20th century.

The service here is phenomenal but the food is soooo good. The sopes are the BEST!!! The al pastor was super juicy and flavorful with the pineapple. The quesabirrias are good but I would recommend the tacos de al pastor and sopes over them. This place also serves the best horchata in the world!!!

WOW!!! We ordered tacos in every meat they had available. And they were all AMAZING! The staff is friendly and fun. We went on a Friday evening and they had a huge line. They worked so quickly and the order took no time at all! The customers guided us on different meats while we waited to order. And guess what? Everyone liked all of the meats offered. So I did what anyone would do.. I ordered all of them!

I have lived in the springs now 20 plus years and I love trying out different food trucks and supporting local small businesses. I have to admit the tacos at this place were the best I’ve had yet! Super delicious freshly made. They make this pineapple salsa unlike anything I’ve ever tried before. Delicious! Very reasonable prices. Family owned nicest people I’ve ever met. Highly recommend

Ordered a asada burrito and it tasted horrible. It had a bad taste to it (cheese) as well it was mostly filled with rice. I also ordered chicken tacos and they were decent but the burrito ruined the overall experience. Picture of the burrito to show how bland it is

Best food truck ever! They came all the way to Pueblo, CO for a private event and were super flexible with last minute changes. Price per person is so good too. Their food is delicious; authentic mexican flavor. The service is fantastic as well, Baltazar and crew were so nice to my guests. Everyone kept asking for their info for future bookings. 100% recommend them!
