I order a combination bowl that had almost all fatty brisket and one piece of round steak and no flank or regular brisket.
The meat was cut twice as thick as fatty brisket would be such that the fat never softened nor enhanced the flavor of the soup. I’ll spare you the photo of the pile of uneaten pieces of fat because one pieces was impossible to chew through and I spat it out. White onion was cut thicker than I’ve come to expect at other Vietnamese joints.
Flavor of the soup itself was fine I guess. Pretty basic and I don’t know which aromatics it was missing but it was lacking something.
At a minimum, the meat needs to be cut thinner so it gets properly cooked and the fat renders
Portion size was also weirdly small for a restaurant that got rid of the ability to buy a small sized portion. I don’t think this was their large size before because this bowl is tiny and I can count how much meat was in it because all but one piece was fatty brisket and it was like 8 slices and not particularly large ones either.
Pho Ton and Pho Green Papaya are both superior for local fare as well as the place near target and the bus station
One server who kept up on things pretty well.
Got our appetizer and drinks pretty quick and our bowls of Pho not long after.
Atmosphere was good and the place is well lit.
Location is one spot in a row of several businesses. Parking was decent but not a big lot.

If I could give any feedback on the pho, it would be to cook the tripe longer. When it arrives in your bowl, it’s chewy/rubbery.
Oh, also, the meatball pho is the same price as the house special pho, doesn’t make sense to me.
Now it’s true they have a bank of televisions in the middle of the place that make it look a sports bar died there and the new owners didn’t know what to do with the leftover screens, but I suppose they can be forgiven, we all know that Americans love their television.
So, let’s get to the the Meat of the situation, and more importantly, the broth of the matter. The basil was the freshest I’ve seen. Not just fresh, but it looked like it had never been packaged. Do they grow it themselves? It was a nice touch, and the lime was juicy. The broth came clear and savory with my requested noodles, which lifted easily from the bowl. The beef was lean and tender and the condiment tray was well stocked, I like to bump up my heat level after getting a good sense of the party going on in the bowl.
A small thing, but I love the Stassen brand of Jasmine tea they serve, it is one of the most fragrant on the market.
I also love how the different tastes come swimming up out of the broth like curious little fish coming to see what heck is going on… here’s a little anise, oh, there’s a bit of lime! Oh! Hello pepper! I would think if you could bath in this stuff, you’d live forever.
Other than the tv screens, which blessedly were not turned up loud, it’s a pretty serene atmosphere, but that didn’t make my old ugly self feel even a bit out of place. I’ll give it a straight up 5 outa 5.
