Specializing in craft beer, but waitress knew little to nothing about them, so I ordered tea. Got some strange mixture of flavored something I couldn’t drink, but $3 nonetheless.
The world’s greatest sauces and offbeat concoctions served in styrofoam. It’s an upscale taco house.
Can’t imagine I’ll be back. They would make a great middle of the road meeting place that would attract a nice crowd and keep them coming back, but I think they want to be important instead.

The goat cheese and bacon jam burger is delightful.
The herb fries are awesome if you like a little vinegar with seasonings.
The queso has a wonderful flavor but a bit on the thin side..will be venturing here again
I like trend-bucking upstarts like this place. Ultimately I think Thurber Mingus is doomed for lack of attention to detail.
Not rustic but more uber-minimalist. Repurposed pallet tables, gray-painted cinderblock walls, black burlap curtains, menus of black ink on two-sided and laminated 8.5” x 11” paper. On which is conspicuously absent any part of their story or detail about where they are sourcing their Texas fare.
That last may be problematic. Much is made by ownership about their “drive towards the best ingredients and products sourced from the state”. Unfortunately they tell us nothing more.
We had two appetizers and all chose something different for entrees. The border taco app is pretty tasty.
The burgers don’t have cutesy names – which is undoubtedly a good thing. It does make ordering more awkward because you either point to the menu or say what is listed (the entire list of ingredients).
Dinner:
• One of us strayed from the burgers and went with the Mex of the Ameri-Mex portion of the menu: Chicken and Smoked Chili Quesadilla. She said it was mighty tasty but didn’t blow her away.
• One went with the intriguingly named Pork & Pork…a boat of “House Fries topped with Pulled Pork, Bacon, Queso Blanco, Crema, and Cilantro”. The chef “forgot” the pulled pork. I shouldn’t have to point out that this is arguably THE key ingredient in a menu item with that name. How does a chef forget this?
• As something of a connoisseur, I came for the highly-touted burgers I’d heard so much about. It being August and on the end of peach season I ordered the Grilled Texas Peaches, Bacon, Goat Cheese and Spinach Burger. I figured this baby would come with a grilled half of a juicy Parker County peach on top of a grass-fed patty from a Texas steer with house-made bacon and Winter Garden spinach. I don’t know if the peaches were from around Weatherford but I can tell you it was just a few slivers in there. Glued to the top of the bun (perfect burger buns) by some crema (not in the description) was the spinach. I think what was supposed to pass for goat cheese may have been mixed in that crema, but the pieces were pretty small and had none of the tang of goat cheese. Perhaps it was the Oaxaca. I think they bacon may actually be made in-house because it was excellent. I also ordered the fries.
Fries are a big sticking point with me. Especially when they are advertised as house cut. For $3+ they had better be. These clearly were pre-frozen foodservice fries. An unforgivable sin in the culinary world. For $3+.
Yes, about that tap wall. The place, Texas-themed as it is (purportedly named after the I-20 exit to the towns of Thurber and Mingus between Weatherford and Ranger) serves only Texas brews. This is excellent. The website suggests the beers are $3 a pint. Even better. But all is not well on the wall.
Two taps have no handles, two of them are cider (?), one is an undrinkable Lakeview beer, one was connected to an empty keg leaving a). Revolver Sidewinder Pale Ale, b). Rahr’s Blonde and c). Pedernales’ Robert Earl Keen Honey Pils as the “choices”. But for $3 as the website says, why not have a REK?
Except it was $7.
Yeah, that’s right. For that kind of money The Bobby Earl himself had better be out on the patio picking some of his songs. Them’s some major huevos, hombre.
Bottom line: burgers are good, not great but plenty pricey. I will be back. I will order the fries and they had better be fresh cut or they are going back. And what goes back will come off the check. And I won’t be having a beer.
My hopes are not high, though, that it will even be there the next time. Inconsistency, halfassery, lack of attention to detail and general quality issues may doom this place. And that would be a real shame. Because while the world is getting the passable Thurber Mingus — it absolutely needs the good Thurber Mingus.
