The chef’s knowledge of his ingredients, where they come from, how to respect them, and why they’re prepared in such a way is inspiring. We’ve had plenty of omakase experiences, but Chef Hiro brings a spark and freshness that transforms what could have been just “high-quality sushi” into a dining experience filled with personality and joy. He’s got sass, humor, and great conversation to match the artistry on the plate.
Favorites? Hard to choose, but the Japanese Butterfish (Takabe), 1-week marinated Aged Golden Eye Snapper with Sea Grapes, Otoro with Uni & Fresh Wasabi all stole the show. The Uni & Ikura mini Donburi with Quail Egg was next-level, and the Smoked (Apple Wood) Ora Salmon w/ Dehydrated Tomato and Garlic left a lasting impression. Every piece was deliberate and elevated.
With just the four of us seated at the eight-person counter, we had the rare treat of having the entire restaurant to ourselves. The evening felt intimate and personal, this is where the true magic of omakase shines, when every piece is crafted as if it’s just for you. Without a doubt, this was the most flavorful omakase experience on the Island this year
I thought my highlight bite would be the otoro topped with uni, caviar, and gold leaf — don’t get me wrong it was an unforgettable bite, but Hiro topped it. He prepared noroguro with a sweet onion ponzu, sea grapes and takuan that blew my mind! It’s dishes like this that remind you omakase is an art form when done right.
If you love omakase and are looking for something special in Honolulu, Hiro no Uchi is absolutely worth the visit. A true hidden gem — and they have tatami seating in addition to the bar!
It’s a little hidden (which I personally loved), but just hit the doorbell above the keypad and someone will let you inside! There’s a small “sushi” sign in the upper left corner of the doorway.
He follows the traditional omakase style of starting with lighter fish and flavors, progressing through heavier and meaty flavors and textures, culminating with an innovative take on tamago.
His artful creations are layered with a multitude of sensations. Combinations like sweet, salty, tangy, umami and spicy all hitting you at different times in the same bite. I did not expect that from just a bite of fish on a bed of rice. Hiro explained that he loves to experiment with flavors.
Hiro himself is very personable and easy going. Don’t hesitate to strike up a conversation with him. His English is quite good. I learned a bit about his life.
I’m not familiar with the area. I parked in the municipal parking lot, which is just around the block. Many of the parking spaces are small, so beware in case you have a larger vehicle.
There are two seatings per night. Hiro mentioned that the restaurant is available for larger parties.
Exquisite tastes that are bold and exciting but do not overpower the fish.
Hiro No Uchi is unassuming from the outside and then transforms into a nice lounge inside… speakeasy vibes
