Some time back my interest was piqued when it was announced there would be a new pizza restaurant called Mother Udders ( yes horrible name ) in conjunction with a chef who was perfecting a recipe he brought from Chicago for cracker-thin tavern style pizza .

They eventually acquired an already existing restaurant called Fortify Pi and became Fortify Pizza & Burger Bar .

The location is pretty cool , with an outside area complete with cornhole games , a “lanai” area ( for lack of a better descriptive word) and an inside bar area. The burgers look great but I didn’t try one , my wife liked the wings , but the star of the show was the pizza .

I ordered the Chicago Thin Pepperoni and Sausage . The Pepperoni was cup and char and very , very flavorful and delicious . The sausage was crumbles , much like you’d see on a Totino’s Party Pizza but tastier . It was not , however , the fennel-sausage pinches that I associate with Chicago Thin Crust pizza and I don’t really think I got my three dollars worth that they charged for the sausage as a “premium topping “ .

The crust of Chicago tavern style pizza is usually cold proofed for several days and then rolled out thin and cured in refrigeration for 24 – 48 hours , reducing the hydration level which produces cracker like texture which defines the genre , or at least one sub-set of the genre . The crust here is a typical Chicago thin texture , but the taste is more fermented than the yeasty flavor I have experienced with some other Chicago thin style pizzas . The flavor is more reminiscent of New York style crust , if not the texture .

All in all I was quite impressed and really enjoyed the pizza . My only complaint is that there was almost no sauce . Next time I would order it with extra sauce , but there will be a next time .

UPDATE: 12/13/2025 – Came in so excited to have that Forrest Mushroom pizza again, asked for extra mushroom and… Disappointment! If that was extra mushroom then I’d I didn’t order extra I would have a cheese pizza. Really bummed! See last pic. Imagine is you took off the “extra” mushroom, how much would I have been left with. While they took off the charge, I would have preferred to have the pizza the way I got it the first time. How much do mushrooms cost at wholesale that one would want to leave such a negative impression. Sad. (Crust was still awesome!)

Loved it! Rainy day and had to stay in the enclosed patio, but awesome! Can’t wait to come back and sit on the outdoor patio.

C’mon! I had the Forrest Mushroom and it rocked! No canned mushrooms here, and I asked Walker (the waiter) to ask the kitchen to do me right with the mushrooms. He did, and yes it was worth the extra charge (you’ll see the last pic with my final fold over piece, last bite, with all those juicy mushrooms!). Mmm!

My wife had the Chicken Caesar which had plentiful chicken, but after taking tasting my crusty pizza, she said she’s have a pizza next time.

Walker (Texas Ranger), named after his grandfather, Papa Walker, was the perfect waiter… chill, confident in the food, accommodating and had good suggestions. He didn’t hover but was there when we needed him. Unusual lately to have such an attentive young man.

We will definitely be back and bring friends! Now… you go!

This visit had highs and lows for us. We were excited about the crispy cracker crust pizza because we have a place in Florida that makes it. We ordered a Greek salad to split and two small super thin crust pizzas. We were seated in the bar area and there were three other people at the bar. It was mildly busy with about a third of the restaurant full. Our waitress took our drink order then our food. The salad arrived quickly and as described. The pizzas came at a reasonable time after. The downside was our waitress never returned to our table. She had three patrons at the bar and seemed to be running to go orders. I finally took our cups to the bar for a refill. I was surprised that no one else offered a hand or that she didn’t ask the manager to refill our drinks or check on us etc. In fact, while I was waiting for her attention to fill our drinks, the manager stood right next to me completely unaware. We felt like we were seated in a black hole. The only time our waitress came by was to hand us the check. No apology was offered, in fact she said nothing. It was awkward and uncomfortable. We paid the bill and left pretty upset. It was a $60 bill and the service was complete trash. The whole staff could use a retraining of helping one another, self awareness and just a general awareness of how much time has passed when checking on customers. We were there almost an hour and never once did she check our table. Needless to say, we will not be returning.

Same great menu and service, new location. We had the white Italian pie, kids had burgers. The food was delicious and Steve provided excellent service. Ask for the homemade honey mustard, it’s so good

I had really good pizza to go but the ceasar salad was depressing. Paid $15 for a LARGE ceasar salad and got lettuce with some seeds. Thought it would be alright since ceasar salad is not much ingredients but there is two dollops of dressing and a very small amount of Parmesan.

I’ve tried to call a couple of times tonight and the phone doesn’t even ring., just sends a busy tone.

We had an eventful night! My son choked… he’s a fast eater but the staff was so accommodating they checked on us and made sure he was okay. First we wanted to change out appetizer order so the chef brought out the one we wanted to change and wanted to give it to us for free. Then it was my nephew’s birthday so they sung happy birthday and gave him a slice of delicious cake.

The food was great and it’s an awesome place for the kids to run around!

Stopped in here to get some food while traveling. It was pretty busy for a Sunday. Seated quickly, took a little bit to get a waitress, ordered the pizza dipper entree which was pretty good, the Caesar salad we got was really small for $15 and tasted terrible, definitely wouldn’t recommend getting that.

Food and service were as good as they have been in years past, which is why Pi is always on our ‘must eat’ list when in Clayton. Great place to watch your favorite game. But the Haystack burger & the. Newton Pi should be what they serve during hostage negotiations … they are ‘make you happy’ food. Absolute gold.
