Excellent evening here. Staff was amazing, lovely to see the calm and happy vibe in the kitchen vs a sometimes overly intense atmosphere one might expect. Their standard chefs menu approach allows focus on the overall evening with no concerns about choosing the right or wrong thing. Noise levels manageable and allow conversation comfortably, decor and music were fine, table sizes and comfort also had no issues.

The food was a great blend of global influences and techniques without becoming cliche or too trend focused. The excitement was at its peak with the snacks and starters, settling in a comfortable spot as the courses went on. The chef and the staff would pass by with every course to explain the various items presented. Massive standouts were the tiny sourdough crumpet snacks topped with gribiche and egg which were truly a perfect bite, the dashi with the celeriac and seafood ramen with so much depth of flavor, and the fresh waffles with the duck paté that smelled absolutely amazing. The apple dessert, especially combined as it should be with the two types of ice cream that comes with was also very good despite being at risk of seeming commonplace given how many places do apple pies/tarts etc.

The sommelier was also very calm and conversational, happy to go over the wine options in detail. Tried a light Rhone in the beginning and a lovely Slovenian option later on, both red.

At €100 per head before drinks, given Dublin prices, the evening did not seem too expensive either for the level of service and techniques delivered.

Went here for my sister’s 40th birthday. It was an amazing experience. The service was very professional with a nice personal touch. The food was faultless. It felt very comfortable and smooth. Time flew and we had a great time. Highly recommended. Special mention for the great playlist.

Very nice experience that I warmly recommend. We also took the wine accompaniment, each wine introduction by the sommelier was very interesting!
The only regret was maybe too much food when we received the meet at the end of the service (maybe a more reduced quantity would have been better). Thanks again for the experience it was very pleasant!

(I’d like to give it 4.5 stars, but alas.)

A very nice evening at Variety Jones, with a tasting menu travelling through a few styles but held together well with the wine pairing.

The kitchen is open, equipped with a wood fired oven and several staff, yet remarkably quiet. The playlist moved through the 70’s and 80’s, with a bit of a synth-pop leaning.

The decor is simple, but very elegant.

The dishes come in order of
snacks,
first,
second,
pasta,
main,
& after.

The first and main have two options, and I believe they’re allocated randomly. The menu is given to you post-meal.

Octopus tempura, ox tongue and tuna crudo would be my highlights – well executed with a broad flavour palette, while still feeling cohesive. Some dishes didn’t quite resonate with me, but there is only one set menu, and you can’t please everyone.

The only detractors apart from a few dishes not to my taste;
The service was very knowledgeable and friendly, although felt at times rushed – one staff member was also quite soft spoken and we were right beside the speaker which didn’t help!
Some constructive criticism we gave was taken indifferently, which might have have been due the rush to buss tables as mentioned previously.
The restaurant was quite cold – there might have been a problem with the heating, I’m not sure, but I was faced with the chill rather than wear my winter jacket all night!

Overall, a very enjoyable evening, just a few things that I felt could be tweaked considering the Michelin endorsement and the final price 🙂

This was truly one of the best meals of my life. The service was warm and attentive, and the ambiance made the entire evening feel special. The wine list was impressive, and the sommelier’s recommendations were absolutely spot on.

My favorite dish of the night was the mushroom dish. Holy cow, it was unbelievably flavorful. Every single plate was delicious though, each one unique and full of depth and creativity.

I cannot wait to go back. The entire experience was exceptional, and the price was incredibly fair for the quality and care that went into every detail. Highly recommended.

We had a really enjoyable meal at Variety Jones and would highly recommend. The restaurant is gorgeous, really cosy with a lovely atmosphere. The staff are so friendly and the sommelier gave us a lovely wine recommendation that wasn’t the most expensive wine on the list. The food was delish, portion sizes are definitely larger than most fine dining restaurants and sadly the night we dined, had no options on the main or the starter. We would 100% go back again!

I came here with my husband recently after getting a voucher as a gift from a friend and it was a really special and memorable evening! Not your average dining experience at all, it’s definitely a far superior dining experience… It’s a taster menu so you don’t have to worry about choosing what to order, it is all brought down to you and each dish is unique and interesting and most importantly delicious…. We got the wine pairings for each course (there are 6) which I definitely would recommend as it totally added to the whole experience and the sommelier really knew what they were talking about… Loved the evening there so much and would highly recommend it Also worth noting the portions are the perfect size and you will be perfectly full after them.

Variety Jones never disappoints.
So happy to have the two signature dish – pasta and liver parfait with waffle again.
Cherry brings up sourness and all the nice taste to it. Ah just amazing. It was better than last time which was 2-3 years ago.
We loved all the dish but wasn’t sure about dandelion leaf in the main dish with lamb.
Otherwise, good to be back in the new spot and some familiar faces.
Wine pairing was really good as well so highly recommend.

We absolutely loved the experience! There’s no menu, they simply ask about any allergies, and the rest is a surprise, which makes the whole experience even more exciting. There were non-alcoholic drink options available, and every bite was an incredible blend of flavours. Highly recommended for anyone who enjoys creative and thoughtful dining. Be sure to book in advance!

Must try for a special occasion in Dublin. We went for my partners birthday and they treated us so well. We also did their wine pairing which I would recommend if it’s your first time going.

Was slightly nervous going in and not knowing what we were going to be served but the flavours worked so well together (who would’ve thought tuna, watermelon and jalapeños would work well together!?.

Deffo save for a special occasion.
