The room is undeniably handsome, the kind of interior that wants you to believe you are about to have a serious dining experience. And to be fair, the food itself is quite good, when it finally appears. Portions, however, are comically small, as if restraint were a conceptual exercise rather than a choice. The lone bright spot is the man running the raclette, who is genuinely warm and attentive and gives the impression of someone who understands hospitality and is quietly doing his best to compensate for everything else.

The problems begin well before the first bite. Being asked, after making a reservation, to share a large high table with strangers is not convivial, it is lazy planning. An entrée was ordered and then effectively forgotten, never arriving after a full hour of waiting. The wine followed its own leisurely timeline. When the food did arrive, it came in staggered installments, transforming what should be a shared meal into a sequence of solitary eating experiences. The waitstaff appeared overwhelmed and undertrained, repeatedly forgetting orders and moving through the room with the polite confusion of people still learning where things are kept.

The restaurant feels unmistakably new, not in the exciting sense, but in the operational one. Workflows are clearly not in place, communication is inconsistent, and efficiency is more aspiration than reality. There is potential here, certainly, but potential is not a substitute for competence. At present, the restaurant seems to be relying on its decor and goodwill to carry an experience that is, structurally, not yet ready for prime time.

We chose L’Ardoise Valaisanne because I was craving good raclette and my wife really wanted a proper rösti—both prominently featured on the menu. Unfortunately, the experience didn’t live up to expectations.

The rösti looked nice on the plate, but that’s where the positives ended. The shredded potatoes were watery, noticeably under-salted, and lacked the crispy crust on the bottom that makes a rösti great. As for the raclette, I ordered one portion just to see how it would be served. After waiting nearly 30 minutes, it arrived looking quite sad: a single slice of melted cheese scraped onto a small plate — nothing else—for CHF 8. For anyone unfamiliar with raclette, it really is that simple, but this version was disappointing even by basic standards. I’ve had raclette multiple times recently during Fastnacht in Lucerne, and this one was significantly worse both in cheese quality and presentation.
Service was mediocre overall, adding to the underwhelming experience. Given all this, I honestly don’t understand how this place has such high Google ratings. Sadly, it didn’t deliver on the classic Swiss dishes we were hoping for.

Ho soggiornato a Crans Montana a Gennaio per una settimana e varie volte sono stata a pranzo e a cena in questo ristorante. La qualità del cibo e della cucina è elevata, i prezzi – considerato che siamo in Svizzera in una località di lusso – sono contenuti. Ho mangiato qui una delle fondute migliori di sempre. Sorprendente quanto fosse perfetta ed equilibrata nei sapori. L’ambiente è ampio, luminoso, accogliente e caldo, con una bella vista. Arredamento curato nei dettagli. Servizio in sala impeccabile. Hugo, il maitre è molto bravo, brillante e affidabile, ha senz’altro fatto la differenza.
