OMG. Soooooo good. The wine and food are unparalleled. The NY Strip was perfection. Our server, Evin, was the best.

The current special on Wednesday’s is a sheet pan pizza and full bottle of wine for $45, which we happily indulged in. The pizza was on a focaccia crust, and topped with the freshest sliced pepperoni and homemade marinara. This was easily one of the best Pizza’s we’ve ever eaten (I have traveled to Italy 3 times up to now).
In addition to the wine and pizza, we also ordered the Triple-Cooked Fries which came with a Dijon dipping sauce … fantastic, 10/10.
We ended our meal with a slice of the Chocolate Silk Pie … one of the best chocolate pies I’ve ever had the pleasure to consume, 10/10 ten times over.
Overall this new spot is an 11/10, bringing a new elevated dining experience to Waco!
While the menu is not overwhelming with too many choices, there are just enough to provide a solid variety of different options to be a crowd-pleaser, all within more than reasonable prices. Blaine’s also offers a phenomenal selection of different wines to pair perfectly with any pallet.
Definitely a new locally owned bistro that deserves all the praise and support, and we can’t wait to visit again soon!!

One of the best dining experiences in Central Texas—especially for the price ($$–$$$). We came for a birthday dinner and were blown away by the quality, creativity, and care in every dish.
The tomato and focaccia salad was exceptional—juicy heirloom tomatoes paired with crispy, olive oil–soaked focaccia, fresh pesto, shaved cheese, and just the right drizzle of balsamic. Bursting with flavor and beautifully plated. The sweet corn gnocchi was a standout: tender gnocchi in a creamy corn sauce topped with crispy shallots, popcorn, and prosciutto—unexpected and absolutely delicious.
And the burger? Outstanding. Served on a buttery brioche bun, it was thick, juicy, and perfectly balanced. The fries were hand-cut, crispy, and served with a bright, herbed aioli that tied everything together.
The atmosphere is stylish yet relaxed: checkerboard floors, soft lighting, string lights overhead, and a well-stocked bar that feels both modern and nostalgic. Even the restroom design reflects the same level of care and charm.
Attentive service, a thoughtful wine list, and a menu that far exceeds what you’d expect at this price point. This place is a hidden gem—and an easy favorite. We’ll absolutely be back.
