We were in town and decided to try this place out based on the good reviews. Even though we stopped in around 2:45PM, the food and service we received were both excellent. The gentleman who took our order was very friendly, prompt, and knowledgeable. We ordered the chips, salsa and guacamole, a flight of all 7 of their tacos, a couple of margaritas, and an appetizer made of crispy cheese with cactus on it (can’t remember the name). Everything was served nicely presented and the food was just great. We really liked the appetizer whose name we can’t remember, but all of the tacos were at least okay, and most were outstanding. We will be back very soon.

Drinks and apps are great, the pork tacos I tried were also great. I was disappointed when I ordered the enchilada de Mole Rojo plate and it came with chocolate mole which wasn’t specified on the menu. Mole Rojo can be made a lot of different ways, many of which do not include choco, I wouldn’t have ordered it if the menu specified that their house rojo mole included chocolate. The employee didn’t seem to understand how there could be any misinterpreting on my end. I gave the plate to a friend who doesn’t mind chocolate mole so I guess it ended up okay.

Summit tacos are at the top of my list for my next Taco craving! I love the atmosphere and that it’s a small establishment because for some reason you know that you’re going to get food with 100% love. We tried the chips and queso along with four tacos with rice and beans and a margarita. Everything was fantastic! It came out very quickly. The meat was seasoned to Perfection. The queso was great. The margarita was delicious even though they had it pre-made and a jug. You can tell that it had good Ingredients to make it. We both really enjoyed the tacos and tried all four different meat styles. Carnitas, barbacoa, chorizo and chicken I believe. They were all really great. The chorizo was a little bit spicy. But, that’s what you should expect from chorizo. The toppings that they put on the tacos were also really flavorful and you could tell that they were all homemade. We both loved the refried beans and rice. I love the margarita with the tajin and sweet sauce on the rim. Also the service and staff was really nice. Super friendly and happy to have you there. I’m excited to take other family members to summit tacos and make this a regular staple. And the prices were great. Exactly what I’d expect from a taco place. I really appreciate that they didn’t overprice things and you got a fair amount of food.

We really like the simple atmosphere and the house converted into a restaurant. Weather was perfect for sitting outside and enjoying our variety of selections. Person at the counter gave us some good recommendations to try from the menu.

very cute joint! recommended to my friends after a meet up with a business partner for lunch- the food is spectacular, service is friendly, and the prices are reasonable. Just be prepared to eat a lot of tacos… they are street-sized portions

If you order one thing from here, make it the hot chocolate. I haven’t had anything like it in Denver. It’s amazingggg and tastes like it has some atole! Just a super unique and delicious flavor. I wish I lived closer so I could get it more often.
I do wish they had chicken tacos and I wasn’t a fan of the beans. But it’s not bad for quick Mexican food. Like I said, the hot chocolate is really the special thing here (just don’t expect it to be thick).

We love to eat at Summit Tacos and had them cater a taco bar for our rehearsal dinner in Lyons and the food was excellent and we received many compliments from guests. They even provided pre-batched margs and dessert. Edward and his team were very friendly and executed the event well. I will say the email communications leading up to the rehearsal dinner, including day of, were a bit of a struggle as a bride, but it all came together in the end and we were glad of our choice and will continue to frequent the restaurant.

Love love love this place! Food is always colorful, fresh and delicious. Veggie options are unique, tacos flights are phenomenal, the drinks are delicious (especially their Paloma!) and the staff are always personable and fun. Seating in or outdoors is comfortable and full of colorful decor and unique designs

Cute taco place in downtown Longmont. The environment was nice, and cozy. I would recommend the tacos to be labeled in the flight.

Summit tacos is really great. My husband and I recently had our rehearsal dinner in their backyard and they really took care of us. Everyone from out of town loved the food, the vibes, and the staff was so on top of things. We really appreciate them. Even before this event we came to Summit a lot. We always have a great time. The elote, escabeche, and chochinitas are the best things on the menu. And the margs of course. Really glad this place is in Longmont. Highly recommend!
