Huge thank you to hostesses Astrid and Liz for the perfect table, and to sommelier David for introducing us to the exclusive Billecart-Salmon Le Rosé 2015 — elegant and a must-try.
Captain Daniel and his assistant Jason delivered flawless, polished service all night. True professionals. Compliments to the chef and kitchen for outstanding execution.
Highlights: Sea Bream Crudo, Tuna Calabrese, tableside Caesar, the iconic Spicy Rigatoni, perfectly cooked Ribeye, and Branzino al Sale Verde uncrusted and deboned tableside. Dogana potatoes and artichokes were excellent.
Cocktails were beautifully balanced — especially the Melon, Raspberry, and Pistachio Colada.
Dessert stole the show: Sorbeti Misti served in real fruit shells (coconut, blood orange, passion fruit, melon) and the rich Chocolate Baci cake.
The ambience is stunning — Italian Riviera vibes, mosaics, original Pablo Picasso artwork, and a deck sitting directly on the Bellagio “Lake Como” with the closest view of the iconic Fountains of Bellagio. Watching the fountains dance beside a docked luxury yacht made it unforgettable.
Not just dinner — a full experience. Can’t wait to return.
Had an incredible night in this very fancy restaurant seated right on the deck and it honestly felt like stepping into a glamorous coastal escape in the middle of the Strip. The ambiance alone sets the tone: warm lighting, open air, water views, and that signature upscale Carbone energy.
The food was outstanding from start to finish. The spicy rigatoni absolutely lived up to its reputation — rich, perfectly balanced, and addictive. The seafood tasted pristine and fresh, and the tableside presentations added a classic, theatrical touch that made the whole experience feel special. Not to mention, we had a secret dish and its a bomb! Sshhh
Service was polished and attentive without ever feeling rushed. Every course was perfectly timed, cocktails were beautifully crafted, and the staff genuinely made us feel taken care of.
One of those meals where you slow down, soak it in, and don’t want the night to end. If you can request deck seating — do it. Worth every minute.

The caviar service was outstanding and easily one of the highlights of the meal; beautifully presented and indulgent without feeling overdone. Every dish we tried was rich, well-executed, and full of flavor.
The only small critique is the portion size of the Spicy Rigatoni Vodka. We ordered what was described as a double portion for a table of five, and it ended up being surprisingly small, barely six noodles per person. While the pasta itself was delicious, the portion felt mismatched to both the table size and the expectation set by “double portion.”
That said, everything else about the experience was exceptional. A truly memorable dinner, and I would absolutely return.
For dinner we ordered some old classics and some new favorites. The spicy rigatoni was familiar and delish and the new lobster fettuccine was a hit with our group.

Carbone Riviera’s decor blends mid-century glamour with Mediterranean coastal vibes, featuring terra-cotta, azure blues, and marble, plus original art by Picasso, Miró, and Renoir, custom Murano glass, sea inspired mosaics, luxurious leather banquettes, and stunning fountain views from terraces (where we sat) with olive trees and even a Riva yacht for unique experiences. Designed by Martin Brudnizki, it evokes the Italian Riviera with elements like citrus groves, Murano chandeliers, and a sophisticated, airy feel, moving from the classic Carbone’s vibe to a lighter, seaside elegance.
It’s described as a “love letter to the Italian coast,” combining classic Carbone theatrics with a fresh, airy, coastal sophistication, making it feel both iconic and new.
We dined on coastal Italian dishes, ordered the lobster fettuccine, salt-baked branzino, and the signature spicy rigatoni vodka. All superb.
Enjoyed some libations from their Riviera cocktail selections… I tried the Mint Smash made with Vodka, Elderflower, Ginger, Mint, and also their Terrazze dell’Etna from Sicily. Fantastic choices.
The service was wonderful, attentive, professional, and friendly, all our desires met and exceeded. 10 out of 10!
Carbone Riviera is redefine luxury dining on the Strip. It’s not just a meal, it’s a statement about where fine dining is heading: toward beauty, balance, and a sense of place. We will definitely return.
– Apps: Lobster meatballs is a must, the Sea Bream was a huge hit at our table, and the Langoustines were exceptional.
– Pastas: Lobster Fettuccine, the Ricotta Gnocchi with caviar, and the Cavatelli Riviera.
– Order the fish. Seriously! The Wild Turbot is fantastic (I liked it better than Branzino), and their new interpretation of Dover Sole was even better than the classic French prep.
– Dessert: Pistachio Cannoli Napoleon was a perfect crunchy finish and the Chocolate Baci Cake was rich.
I guess you can order steak but my rec is stick with the seafood.
Overall, I really loved it and it’s cool to see a new Carbone concept. Btw, I know everyone wants to sit outside on the pond but I did it once and I did feel mist coming down on me when the fountains shot up. My one note of caution.
