Came in for the first time and I’m glad to say I found my new favorite Mexican restaurant. The food was delectable with a subtle spice to it. I also found the most authentic tasting Micheladas here, the kind that leave you feeling refreshed on a hot day. The servers are all friendly, they made us feel right at home. Rubens Grill is the best Mexican restaurant in northern Colorado.

I got the chips and queso and guacamole as well as the chile Colorado. Everything was really good. The guacamole was actually nice, fresh and seasoned well. The chile Colorado reminded me of asado from where I’m from (the Midland, Texas area). It was a little more saucy though. The flavor was really good with a decent amount of heat. The servers were all very nice too. Definitely will be back to try some other menu items

By all indicators this is the kind of restaurant I love, and perhaps on another day it would rock, but our experience didn’t live up to expectations. We ran out of salsa early, and our waiter said he’d bring more, but he forgot. (We flagged another server and she took care of us.) Later, my wife remarked to me that the grilled chicken in her Burrito Deluxe was chewy, and I had been thinking the exact same thing about the strips of steak in my Chile Colorado.

As an aside, this restaurant has a PIF – a special tax that goes not to support Loveland city services, but to the developer of the property. Businesses and developers existed long before PIFs – they aren’t necessary and should be opposed.

I ordered the carnitas plate, there was a rock I didn’t see in the refried beans, and I bit down pretty hard on it.

I told my waitress and the manager came, he immediately acknowledged that there may be rocks in the beans based on how they process/clean them. I have eaten at Mexican restaurants hundreds of times and that has not happened before.

The manager said I would get a discount on my meal, and the drink comped. When the receipt came I didn’t notice the drink wasn’t comped. My waitress said she didn’t get approval for a drink comp, they ended up giving me $15 cash to compensate.

Lost my appetite after the rock. The carnitas meat was decent & restaurant was clean, but disappointing overall.

Really wanted to love this place, so well reviewed, menu looked good, photos looked good, decent price point, etc. Went as 4 top on a Friday night and just not consistent at all.

Chips were good but salsa was bland (think tomato sauce). House margarita wasn’t great (Cuervo isn’t a great base for a cocktail – be sure to get a drink with the maestro dobel tequila instead) and the black salt on the rim was a weird touch. But, the tamarind margarita was excellent – real tamarind flavor, not too sweet and not too tart.

Crispy rellano was great, green chili was thin, carnitas were flavorful but dry. Refrieds were solid but the rice was bland. Birria was really good – great flavor and not completely soaking like some places. But had the birria in the quesadilla which was extremely rich, almost like it had cream cheese in it along with Oaxaca/Jack. Tasty, but too much – came with guac and sour cream so fat on fat on fat and nothing bright to cut through it like pico or other salsa. Asked for a side of tomatillo to go with it and that helped.

What was consistent, and excellent, was the service. Extremely prompt, attentive and polite. Loved being able to join the wait-list online and table was ready when we walked in the door. Mobile point of sale made it easy for the server to take orders and easy to settle up when the check came. No knives in the place settings which was odd and made it difficult to cut through some items.

Overall, there was a lot to like in the experience but the inconsistency in the food and drink will probably keep us from coming back. A few tweaks (better well tequila, fresh juice and less sour mix, spice up the salsa, etc.) and it could be a frequent visit but there’s a lot of Mexican to choose from in NoCo and Ruben’s just wasn’t for us.

I went twice this week and loved each time. The staff is great and the food is awesome. Both times I got margaritas and loved it. This most recent time we got the margarita tower which was awesome and the perfect amount for about 5-6 people. If you have that amount and are interested, you should go for it.

The food is also delicious. I did the fajitas once and the chorizo dip the other time. I think the chips and salsa are also great and filling. Just an all around good for a family dinner or grabbing a margarita with a friend!

I highly encourage you to check this place out if you get the chance.

Birria ramen was absolutely FIRE. My husband had the fajitas which were also super good. Love supporting this locally owned spot—hands down one of our favorite lunch places. Consistently amazing food and great vibes. Highly recommend!

First visit here. We both had excellent Margaritas. They tasted different than what we normally get due to a different tequila. Not a bad taste just different and that is a good thing. I had the combination plate with a crispy chili relleno, taco, and tostada. The tostada had shredded beef that was really good. Service was good. It was a busy lunch hour on a Thursday. Packed actually so many people had to walk from across the street. I’m sure we will come back.
