CÁN- the place- where Mexican culture is spoken through food and cocteleria. Inspired by Chef Alamilla’s native Michoacán—also the namesake of the bar—and his Purépecha heritage, the menu is a thoughtful exploration of pre-colonial Mexican cuisine. The food intentionally excludes proteins introduced to the Americas after colonization, with more than half of the ingredients sourced from plants and elements native to the Americas, honoring ancestral techniques and flavors. The cocktail program is deeply rooted in Mexican culture, built around native ingredients and presented in rotating volumes. Each volume draws from master mixologist Joshua Rivas’s childhood in Mexico City and the Yucatán Peninsula, blending tradition + storytelling.
