Burnt Side Down in Bellingham was amazing. I ordered the grilled cheese with bacon and it seriously exceeded expectations. The cheese crust on the outside was so delicious — perfectly crispy, golden, and packed with flavor. The bacon was cooked just right and added the perfect salty crunch. Simple comfort food done at a really high level. Great atmosphere and friendly staff too. I’ll definitely be back for another one.

It’s no coincidence that this place earned Best Food Truck in 2024 and 2025. I absolutely loved my Italian Stallion with crispy cheese spilling out of it. They allowed me to substitute the rosemary bread. One friend got their original Burnt Side Down sandwich, another got the Send It. All were fantastic. The side of tomato soup was perfect. I highly recommend!

I finally got to try the ‘Bham and Cheese’ and it was absolutely delicious! The sandwich was perfectly grilled, and the 3 cheeses were so gooey and flavorful. My gf got easy cheesy and loved hers.

Spectacular grilled cheese sandwiches! I had the signature “burnt side down” and my wife had the “jalapeno popper”. Both were excellent. It is a food truck so the atmosphere suffers but it’s right beside a brewery. So go inside and pair your grilled cheese sandwich with a spectacular pint.

Love, love, LOVE Burnt Side Down! I love it when grilled cheese is spun on its head and their menu is chock-full of DELICIOUS options! Everything is on Avenue Bread (YUM) and I love that they have a couple of dessert items, too!

Plus, they’re parked at Stemma Brewing, which is a fun brewery in the southern/central part of town just off the freeway, so you can snack a beer or super squeeze to pair with your sandwich of choice.
