HindSight BBQ may only be a year old but cooking in the Schmidt family has been a lifelong endeavor. We have spent years trying to perfect the BBQ craft. And we promise to continue to strive for that perfection. Starting a restaurant during a global pandemic isn’t exactly what we had in mind. BLESS THE GENERAL
Was looking for a good BBQ place to take my mom for her birthday and this place definitely met all our expectations. We got the regular and baby back ribs, brisket, honey cornbread, bacon wrapped stuffed jalapeños, coleslaw, greens, and of course, burnt ends, which were definitely the highlight of the meal!

The pricing isn’t exactly cheap, but it’s worth every penny and not much different from other BBQ spots. The actual indoor seating area is pretty small but nicely put together, and there is plenty of outdoor seating if you’re into that.

The food was all perfectly cooked and fell right off the bone. Definitely will be back and if you’re on the fence, just try it out! You can thank me later.

First time ordering here. We asked for extra BBQ sauce and we ordered to-go. Did not receive even 1 BBQ sauce let alone “extra”. Brisket and ribs were tender but dry. Sausage link was good but chewy. The food was also barely warm and the potato salad was mashed potatoes and runny.

Mac and cheese was the best thing I tried very good. Will possibly try again soon. Maybe because we ordered to go.

Get the brisket only if you’re trying to start a fire and need kindling!! I used to go here and it was pretty good. Used to love the pork belly. I stopped because I got sick of paying $75 and not ever getting bbq sauce, even after requesting that they make sure it’s in the bag. Decided to try it again. Wow has it gone downhill. The brisket had to be leftover from the day before. It’s so dry I didn’t even eat it. Other things were ok. Nothing to write home about. The only positive is that I don’t have any reason to go to Waterbury anymore.

If you like BBQ grilled meat, this is an excellent option. I highly recommend the ribs and wings, especially because they have outdoor seating and indoor seating for the colder months.

An unparalleled flavor with perfectly cooked BBQ ribs that melt just by touching the meat.

The chicken wings were super good, we loved them, and the cornbread was perfect for the kids. The drinks were unbeatable, and the heat was perfect that day. We decided to eat outside to enjoy the outdoor experience.

Found this place randomly on a visit to CT and both my husband and I were blown away. We went for lunch, got the brisket platter with cornbread and the pulled chicken sandwich with the sidewinder fries. Everything was delicious, moist, tender, and flavorful; I don’t particularly care for smoked chicken but I even enjoyed the sandwich! The service was friendly and helpful and the food came out very quickly. We were thrilled to find this spot!

The star of the show was the pork belly. It was very tender with bits of fat that melted in your mouth, really outshining everything else we ordered (and we ordered quite a bit). The rest of our meals were just a bit lackluster and smaller portions than we imagined given the price. All in all, the interior was quite charming in regards to its organization, decorations, and variety of seating. Outdoor seating was plentiful as well, which surely is ideal in warmer weather. Parking is also pretty bountiful. Not sure I’d be inspired to return, but was worth a try.

UPDATE: HINDSIGHT BBQ was a great stop on our way home. The staff was super friendly, and the whole place had that perfect BBQ joint vibe—laid-back, but you can tell they take their food seriously.

We had the brisket burger, and it was fantastic—juicy, smoky, and full of flavor. The brisket sandwich was just as good, piled high with tender, perfectly smoked beef. The pork belly taco was a nice surprise—crispy, rich, and packed with flavor. And the mac and cheese was Creamy, cheesy, and the perfect side to go with everything.

The best part was meeting the pit master. He was incredibly friendly and even took the time to give us a little insight into the pits. You can tell he really loves what he does, and that passion comes through in the food.

If you’re in the area and love BBQ, Hindsight is definitely worth a stop. Great food, great people—can’t ask for more!
I will qualify this by saying I did once own a BBQ restaurant and won a few awards for our BBQ ribs and brisket. That being said, having traveled to Texas and worked in a few places in and around Austin. This BBQ comes as close to Texas BBQ as I’ve had since being in Austin.

The group I was with passed by and noticed the BBQ smell in the air so we decided to pop in for a late lunch. This place is a little gem, got a pulled pork sandwich and the sidewinder fries they were excellent. Service was also great and food came relatively quick.

I got takeout so your milage may vary, that being said i loosen my expectations when the food is sitting in my car for 10+ minutes because not everything travels well, but this place definitely passes on that aspect, definitely wanna compare how it is on a dine in but I ordered wings, a sampler and onion rings and was really pleasantly surprised. The onion rings actually had FLAVOR which was unexpected, I was ready for some generic greasy side but it actually has a sweet taste with a very mild spice after taste. The wings had a solid smoky flavor from the cook and I got the sweet heat and felt like the sauce was cooked in which is what I prefer rather than being tossed post cook. The sausage tastes fantastic the ribs had a nice smoke on them with a BBQ glaze, feel like I need to give the brisket a second chance on a dine in typically ive found it doesn’t travel the best but it still tasted good. Will repeat, Mac and cheese was solid, wish the slaw was a bit creamier and the pickle chips provide a nice pallet cleanse.
