Serving size of the chicken has gotten bigger significantly like double.
Finally turned the heater at comfortable level
And food arrived within 10 mins.

Cute new restaurant.
Pros:
Food was good. I tried the Chicken inasal. Flavor was good, chicken was very small but serving size of the garlic rice and pickled carrots was good and so was the taste. I love the sauce reduction.
Service was great, front staff was nice.
Location is convenient with a jap store beside it, milk tea place etc.
Cons on why i only gave 3 stars:
Food took 25 mins to come out, it looks like its fresh from the airfryer so im not too mad but if youre hungry prepare for the wait.
Ube bites was good but tasted alcohol-y, the ube extract they used was probably the one that tasted very alcohol, which i mistakenly used before and had the same taste and it gave it a bad aftertaste.
Place was really cold, idk why they didnt turn on the heat on a 42f weather lol
Overall not a deal breaker and would comeback to give it another try.
From the moment you walk in, the vibe hits you. The space feels nothing like a typical strip-mall restaurant. It’s more like a European café meets bohemian tropical living plants, warm lighting, great music, and an atmosphere that feels curated, relaxed, and welcoming. It’s the kind of place you want to sit and enjoy, not rush through.
The food is where it really shines.
Their Danish open-faced sandwiches (smørrebrød), presented sushi-style as “smushi,” are incredibly creative and beautifully done. We tried a wide variety including pickled herring, smoked salmon, meatballs, shrimp, egg with roe, roast beef, and fried halibut. Every single bite was thoughtful, balanced, and packed with flavor. They may look like small bites, but don’t be fooled it’s filling and great value for the quality.
The UFO Paninis are another standout. Sealed, pressed, and shaped like a literal UFO, they’re unlike anything else in town. We had the lamb UFO and it was excellent, and they also mentioned they offer breakfast versions, which we’ll definitely be coming back to try.
The Nordic-inspired hot dog was next level seriously one of the best hot dogs I’ve had. Perfectly executed and packed with flavor.
What really makes Nordic Bites feel like Stockton is how they blend cultures. They offer Filipino breakfast and dishes as well, and they absolutely crushed it. The BBQ pork skewers with rice, medium egg, pickled onions, pickled carrots, chili oil, and fish sauce were layered, bold, and full of comfort and flavor. It’s a perfect example of Stockton’s melting pot on a plate.
Everything that’s smoked and pickled is done in-house, and you can taste the care and craftsmanship in every bite.
The drinks were just as impressive. The ube chai tea and cardamom chai tea were both incredible unique, flavorful, and perfectly spiced.
Desserts were the perfect finish. The fluffy mango cake and the fresh, spongy ube cake were light, creamy, and absolutely delicious. You can tell everything is made with intention and pride.
Another huge plus: the service and overall readiness. The kitchen was clean, organized, and clearly well-run. The staff was friendly, knowledgeable, and happy to explain the menu and concepts, which makes a big difference with such a unique offering.
They do close early (around 2–3pm), but they also offer private catering and banquet events for parties of 25+ guests, including their Filipino menu which is a huge hidden gem for anyone looking to host something different and memorable.
Nordic Bites is truly one of a kind. Danish and Nordic-inspired cuisine, Filipino flavors, incredible drinks, amazing desserts, and a beautiful space all in Stockton. You will not find anything else like this around here.

Overall, the atmosphere is nice and the staff are friendly and welcoming. The standout for me was the UFO menu item—it was a unique, creative idea and the taste was excellent.
That said, I do have a few critiques. I’m not sure why both a table menu and a board menu are needed; the board menu only added confusion, and I think it would be better without it. As for the Wagyu hot dog, I couldn’t really tell if the sausage was Wagyu, and aside from the sausage, there didn’t seem to be any Wagyu beef in it. On top of that, the mustard sauce was far too strong and overpowered the flavor.
If I had only ordered the UFO, I would have easily given a 5-star rating. Unfortunately, the confusing menu setup and the underwhelming Wagyu dish made the overall experience feel inconsistent.
Immediately greeted warmly by the staff and the owner. The owner is a lovely, Filipino lady named Sally.
The vibe inside is warm and welcoming. This restaurant has many different eats, drinks, and desserts.
I ordered the meatball bowl, the ube chai, and mango cream cake. All tasted amazing and would definitely return to try other things.
