GET THE PHILLY!!! Absolutely loaded with cheese and the flavor is so good.
The service was some of the friendliest I’ve ever encountered. They had a nice,small patio area with a great view of the mountains. The waitress brought our dog a water bowl without us even asking!

This was so unexpected! We had just a few minutes before heading to the airport for our trip home and this place did not disappoint. My husband had the Doc Martin and I had the ham and cheese (hold the onions). Both were outstanding. Probably the best game and cheese I’ve had. Husband was very happy with his choice, as well. I liked the whimsy of the art in the bathroom, too.

I love a good sandwich place and they have a lot of quality options. You can also build your own sandwich. They sell a lot of different types of mustard to purchase. Lots of seating (I saw some outside benches too) Nice staff. I just feel like the sourdough was lacking that taste but I’ll try other breads.

Amazing sandwich shop. If you’re in the springs, definitely don’t miss Colonel Mustard’s. If I lived here, I would be eating at this place way too much. Alex at the front treated us so well and I consistently heard him going above and beyond with every customer, recommending sandwiches and mustards, etc. We got the PABST and the lobster roll as well as a pretzel, which came with a flight of mustards and a large tub of amazing beer cheese. Both sandwiches were fantastic, a lobster roll can be a dicey proposition this far from the ocean and this one was fresh and delicious and packed with flavor, and the PABST was just a perfectly delicious, jammed packed play on a BLT.

You’ll spend a pretty penny, lunch was $40 for me and my wife but these are the best damn sandwiches in colorado! Staf is super pleasant and heard that we were going to share our sandwiches so they made our plates with the sandwiches split for us. I’m going to go broke working around the corner from them! Lol get here if you haven’t already, you won’t be disappointed!!!!!

We’re on vacation here and saw good reviews. It is a smaller place in a small strip mall and we passed it. Their food was great. Hero sub, London Broil, and Turkey wrap, is what we had.
They also gave samples of Colonel Mustard’s Ice Cream. In general I hate mustard except on a Chicago Hot Dog. The ice cream is awesome, sweet with a little kick. We took a pint to go and they included pretzels for it. Yum!
***edited to add that we never expected the pretzels so it was a surprise. And it’s well worth looking hard for the place. Since we weren’t familiar with the roads, google maps told us we passed it and we’re so glad we turned around.
