I ordered the Fort Knox potato with the chop mix. It was alright. I’d probably try some else if I want back. My friend ordered the Brisket which he said was okay. But he was disappointed with how peach cobbler came out with the ice cream being basically soup.
Got their Half & Half Dinner with brisket and pork with sides of salad and Mac n Cheese.
The meat was juicy, soft and really good. The bread buttery and warm which I enjoyed. The Mac n Cheese is ok.
Definitely come hungry!
The atmosphere at Red Chimney BBQ is fantastic! The decor really sets it apart, with lots of animal mounts like deer, elk, bear, and buffalo adding a rustic charm. There are also collectible plates, dishes, and unique older-era knick-knacks that make it feel cozy and interesting.
The food was great overall. The pecan chicken was fall-off-the-bone juicy and absolutely delicious, and the chopped BBQ had a nice hint of sweetness. We ended up with a double order of mac and cheese because it was so cheesy and satisfying. The dinner rolls were also a standout—stuffed with chopped BBQ, they were a real treat. The only downside was the beans, which were pretty average; a little pork fat might’ve elevated their flavor.
The wait staff was attentive but felt more transactional than friendly, which was a slight downside to an otherwise great experience.
We’ll likely be back next time we’re in town to enjoy more of the delicious food and unique atmosphere!
Food was very disappointing. I ordered the half & half dinner with brisket and pork sausage. Also ordered fries and mac and cheese, but got fries and beans instead.
The good:
– The jalapeno pork sausage was pretty good!
– The buns provided were well toasted and tasty
– The fries were decent
The bad:
– Got beans instead of mac and cheese. The beans tasted almost entirely unseasoned
– My waitress forgot to apply a discount to my meal (received a coupon voucher with my hotel)
The ugly:
– The brisket was the probably the driest, toughest brisket I’ve ever eaten. It was tougher than a well-done steak, and it was gray and off-putting. I struggled to even cut it
– After tax and tip, it was nearly $40 for the half & half platter and a fountain drink that wasn’t refilled
I recognize that there aren’t a lot of options for BBQ here in Carlsbad, but you’re probably better off going elsewhere.
Now the brisket and turkey was very dry. Felt like you just kept chewing and chewing. The coleslaw was meh. The rolls were chewy. The okra was good.
Our waitress was not happy to be there. She was not rude but cold. Which made the atmosphere a little thick.
They do offer beer which a plus.
IDK perhaps I ordered the wrong food for this place, but at this price, that potato should have damn near took up the whole plate. My wife got turkey, mac and cheese and mashed potatoes. This and my potato was like $60. She ate about a third of it…..maybe.
