The restaurant was very clean, and the food was mild, not too heavy, and overall quite good. The dishes were served in a reasonable amount of time as well. It’s a pretty solid spot for Vietnamese pho in this area.
My only small complaint is that I wish the portion of meat was a bit more generous.

Stopped in for dinner before travelling back to hometown a couple hours away. Restaurant was quiet so was seated right away. Ordered the Special Banh Mi sandwich and did not taste like a banh mi. Couldn’t taste the pickled veggies and pate and was oddly salty! Told myself, maybe this was how they made it so I shrugged it off. Then before heading back on the road, placed an to go order of Grilled Pork Chop with Shredded Pork Skin for my husband. When I got home, I was furious of what they had served me! This meal is not worth $24! I’m not to complain but tonight this did it. I didn’t get a Pork Chop; I got a thin piece of boneless pork probably weighs at 4oz and thinner than a jerky! I was so speechless! If I would of opened and looked inside before heading out, I would of told the cashier to take it off the bill and take it back to the kitchen cause this was unacceptable. Overall for my experience, food wasn’t good and price is over rated for what they serve. Photos speaks for itself. I wouldn’t recommend nor go back to this restaurant. So very disappointed.

I visited Saigon Noodles recently and really enjoyed the experience. The atmosphere was wonderful and the service was impressively quick. I had the #13 Steak Pho; the flavor was great, though the broth was a bit on the salty side for my personal taste and I found the meat portion to be a little small. Overall, the prices are very reasonable and I’m looking forward to coming back to try the boba!

Once a go-to spot for pho in Madison, Saigon Noodles now struggles to stand out amid growing competition. While the service and atmosphere remain welcoming, the food quality and portion sizes fall short of expectations.
In depth
I used to visit Saigon Noodles over a decade ago when it was considered the place for pho during my college days. Unfortunately, the dining landscape has evolved, and many competitors in the same price range have since elevated their offerings.
During my recent visit, the pho was disappointingly bland and lacked any distinctive flavor. The regular-sized bowl was noticeably small—comparable to a children’s portion at most other establishments—though it did include a generous amount of tripe. The egg rolls has a unique flavor, that did bring back nostalgia.
On a positive note, the customer service was excellent. The staff were friendly, attentive, and accommodating. The restaurant’s spacious, open layout also makes it a comfortable setting for families and groups of friends.
Overall, while Saigon Noodles still offers a pleasant dining environment and solid service, the food no longer matches the level of quality or value found elsewhere.

Saigon Noodles was the place to be on Friday for dinner. Even with all the folks already there, we didn’t have to wait for a table. I ordered the steak pho (#13) and it was the bowl was humongous. The noodles and the steak were really good! The broth was decent but I have had better. It wasn’t as light as I’m used to. It was salty and fatty. It was not bad by any stretch of the imagination but it was missing some of the aromatics and citrusy goodness that I love. We took the leftover pho home, diluted the broth, and it was more to my liking. For Madison, Saigon Noodles is a solid option if you’re craving pho.

A birthday request and glad it turned out well. Food is delicious as always and the service was what I expected to get when I go out to eat! Timely manner even during a busy time is a nice change. Definitely upgrade from 3 to 4 stars ⭐️! Think I’ll keep coming here till I ordered everything on the menu and post the pictures on here!
Update 6-5-21
MUCH better in service! Timely manor although it might be around a slower period but that doesn’t matter to me. Food was definitely great! My 8yo son loves it and so do I! 4.5 ⭐️ this time around! Keep it up please!

Sad that I have to give it 3 ⭐️, maybe 3-1/2. Food is good as always, service needs BIG time help. Slow and not attentive is NOT my idea of eating out. I have been going here over the years and will continue to, but today was not their best in service. Food have always been good, although it’s getting pricey. Don’t mind paying more for the food, but the service better well match.

Super friendly staff and very helpful. The was well maintained and clean. My husband had a Pho, and he said one off the best he has had (he loves to eat), however, it was small even though he had the large one ♀️. I was not particularly a fan of my sea food crispy egg noodles (I was not expecting my noodlesto to be fried, silly me). However, the vegetables were good. We also had an appetizers and it was good.

It was busy, usually a good sign. Took awhile to get our order in, took awhile to come out. I got a pork bun mi and beef pho. My girl got a spicy beef pho and a fried rice. The pork on my sandwich was so thin it only had one side. I actually stacked the little pieces on one half of the sandwich to get an actual bite. The beef in the pho was so fatty it was an instant turn off. And most pieces were just fatty bits. My girl also got the chicken fried rice. Horrible. Didn’t look like they actually fired it, maybe they put it on a flat top for a few seconds…. The chicken looked like it was boiled, pure white, egg bits were super strange, like maybe they used an egg substitute. Nothing had flavor. It was a big disappointment for 85.00 plus tip. We didn’t take anything home.
