Cons – Don’t order chips and queso, you get maybe 14 blue corn tortilla chips and an ounce to an ounce and a half of queso and charged $4.95. We’ll definitely be back, just not for the chips and queso.

Pancho’s has become our go to Mexican eatery in Springfield. We end up ordering two meals for each of us to last us for multiple meals. Any other Mecican establishment is compared to Pancho’s fir us. Our top picks are:
Chips w/Dip | Their queso blanco is excellent with the chips, but also makes a great addition to the meals.
Carnitas Combo Plate | smokey, tender, fresh, as well as plentiful. You cannot eat this in one sitting, but you really want to! Makes a great mix with eggs for a great morning carnitas taco (or three, haha).
Smothered Burrito | Spicy but delectable. The burrito takes up half the container. Paired with their beans and rice it makes a wonderful meal.
Fiesta Enchilidas | I am particularly fond of just a seasoned ground beef enchilada and this satisfies with three of them. My only wish is that there was four of them!
Steak Ranchero | Steak, eggs, tomatoes, onions, peppers, and rice. You will want to eat it all tonight, but saving some for the morning will make you wake up early the next day!

This is one of my very favorite Mexican restaurants in this town! The food is always fresh and sooooooo good! Anything I’ve had has always been yummy and the employees are always very kind and friendly. I definitely recommend this place!

Food was horrible. I ordered through Uber Eats. It was cold, burnt and nasty. The street tacos were so bland and dry. The fajitas mix was burnt, spicy and just thrown together. My cold mix was just thrown on top of the food and all over the place. I was supposed to get a medium drink but never got it. They should be ashamed.

Pancho’s is a quiet little place. You don’t really notice it as you’re driving down Campbell, despite it being located within view of Bass Pro Shop. With that said, I absolutely love the quesadillas here. While there’s plenty of options, a carne asada quesadilla always hits the spot. While the interior looks a little worn and it can be a bit drafty on the far side, the food is good. My wife and I have come here a number of times and there’s not too much we can complain about. There’s a drive thru if you’re in a hurry, but I haven’t used it and I can’t comment on wait times. If you’re looking to try something new, I’d say Pancho’s is worth a shot. You might just find yourself impressed.
