CooperSmith’s Pub & Brewing is absolutely dialed in right now.

The food is great, the cocktails are on point, and the beer is consistently amazing—but what really stands out is how much this place has leveled up. You can tell they’ve put serious effort into updates, cleanliness, and overall quality, and it shows in every detail.

Add in live music and the new poolside opening, and it just takes the whole experience to another level. Whether you’re grabbing drinks, dinner, or just hanging out, CooperSmith’s delivers every time.

Hands down, this is my favorite restaurant in downtown Fort Collins.

I had my second visit at CooperSmith’s last night (because I really enjoyed the first experience) and it was even more fantastic this time. My wife and I were immediately greeted with smiles and hello’s from the staff. The bartender Allie took such wonderful care of us. There was some of the best live music I’ve ever heard at a bar (Elise Wunder). The cocktails were excellent, and the food was to die for. We had the fish & chips and the schnitzel. Both were phenomenal. Big portions too. We had so much fun at Coopersmith’s and truly felt cared for. Loved it!

We really enjoyed the ambience – sophisticated but approachable and inviting. The music was nice but at a volume that we could enjoy our conversation. And the table placards advertising 2 for $25 burgers on Mondays has me wishing we would be in town a bit longer.

Have eaten dinner and lunch here several times. First the good. Location is great with nice outdoor space in the square. Inside space is dated but okay. Waitstaff is consistent and pleasant. Now the big problem. The beer is not up to par and the food is almost as lacking. This establishment has been around a long time (it’s the oldest craft brewery in town) but the beer is some of the dullest and uninspired I have tasted. The majority of the beer offerings lack flavor and complexity. Try Peculier in FC or Windsor if you want to compare to a high quality and sophisticated brewer. The food menu is not much either. Average at best pub faire so it’s not terrible. Just keep your expectations in check.

I have been going to CooperSmiths for as long as I can remember and I’ve always loved it. Many restaurants fall from grace when under new ownership but not Coops-the service, food, and just overall atmosphere has improved since the change. I never have a rude or mean waiter/waitress, and the food is always amazing with portions that leave leftovers. 10/10 would recommend, great place for a casual lunch or even a business lunch. Keep up guys!!

The service was good. No complaints at all. The food was just ok. The french fries and brussel sprouts, which we got without bacon, we’re very good. Two of us got the salmon and it was okay. One of us got the black bean burger which they did not enjoy at all and in fact they didn’t even finish half of it. One of the complaints was that it was very mushy. Something else I found kind of interesting is there are forks where a three-pronged fork which is fine, but the spacing was exactly such that the asparagus strips for the salmon went right in between the tongs and there was no way to pick up the little capers! For us it wasn’t annoying, it just resulted in us being creative with how we enjoyed our bites of salmon with the vegetables.

Great place in downtown Fort Collins. You can dine either inside or outside. Nice beer selection. The food is tasty and generous. We tried the tricolor nachos as appetizers and enjoyed very much. I then had the prime rib sandwich with sweet potato waffle fries. Very good as well.

Tonight, I got to see my friend play music. The frontman also happens to be the man responsible for the awesome beers on tap. The beers here are soon going to be the best in town. This location has always been a staple in this community. Food, great. Beers, great. If you are visiting town, definitely worth a visit!
