I had been waiting to go to this place! Recently, I did visit with my husband, and I am happy to report a five star experience. I was happy to see the owner of the restaurant walking around, interacting with customers and also helping out his team of staff members!

I saw the hard work and effort of multiple people coming together to put on an extra extraordinary experience for their guests.

And the flavors were perfect and alluring. The atmosphere was fantastic, and during our visit, I confirmed that the spot as of February 2026 has been open approximately two years now.

With that being said, no place is 100% perfect and my personal thoughts on areas of improvement :

1. in the service and seating etiquette: Personally, I just don’t like being seated and then handed a tablet. It makes the experience impersonal, and if you are at the table with multiple people, now you guys have to share a single menu instead of everyone being able to dialogue and interact with the menu at the same time.

I don’t feel like the robots are needed. It actually is made the experience problematic as everything was perfect except one dish that was brought and sitting on a robot dish tray. So it sat on there cold.

Maybe a suggestion is to lose the technology, have the staff bring hardback, menus, and interact with your customers that are excited to interact with you.

Great atmosphere, right by the water and restaurant is elegantly decorated.
The price of food is a little higher for obvious reasons. My favorite is the Banh Beo 10/10 Steak Skewers 10/10 Fresh Oyster 10/10
The hyped dish Steak on the skillet unfortunately didn’t really deliver. The meat was rather bland and not much flavor to it. Definitely not worth the price 5/10.
Pho tai lan has underwhelming broth 5/10.
I love the cocktails selection. Tried several ones and they’re all great!

Overall the food experience is a little bit underwhelming given how fancy this place looks. Yes the restaurant looks nice, but the flavors are comparable to those regular viet restaurants.. for a higher price. I’d recommend them solidifying some dishes’ flavor and make them more authentic/ higher quality (like Ba Bar for example) instead of just chasing “the vibe”, so we would want to come back often for the food.

First visit to Anchovies & Salt! I saw it on IG a lot. The place is cool with it being the largest and having great traditional decoration. The owner came by to chat while we were waiting for the food and even gave us a rice bowl to go with our Humble Set. The eggplant was good and I’m familiar with the salted fish / pork dish so we liked that and the anchovies were nice as well.

We ordered the Pho and Bun Bo Hue. The broths were both a bit too sweet for us. And it wasn’t served that hot. We needed the BBH soup reheated because the beef wasn’t cooking in it. It came out steaming but quickly cooled down. Maybe they could warm the stone bowls before putting everything in to keep it all hot. I also found the deeply savory umami flavor to be missing in the broths, but I’m a bit spoiled because my mom makes both at home.
The pho portion was quite small. I usually order less noodles at other places but this one wasn’t filling, and definitely wouldn’t be very filling for others that eat a lot.
Cool spot to visit but I hope the noodle broths would be more flavorful and served hot.

Flew to Seattle for the day specifically to try this place. It was awesome getting to try so many different flavors in one sitting. From the savory golden pho pillows, to the refreshing june plum salad with the super crispy anchovies, and even the best sweet and salty fish sauce flan, this meal was well worth the trip. The wagyu skewers were perfectly seasoned but not quite as tender as expected. And the geoduck dish was sweet in a way that made sense but would love to see a savory option.
My main gripe was that there were a ton of things that were sold out and wasn’t able to try which was a bit frustrating but that might just mean their ingredients are very fresh so perhaps I’ll just have to come back to try them.
Overall I’d definitely recommend coming with a bunch of friends to order as much as possible and see for yourself what you like. But if nothing else, even a simple coffee date with the fish sauce flan(must try) would also be perfect.

Came to Anchovies and Salt today and honestly loved everything we ordered. The flavors were bold but super balanced, and every dish felt thoughtfully plated and fresh.

Highlights for me:

Pasture raised chicken salad (Gỏi Gà Đi Bộ): bright, refreshing, and the peanuts added the perfect crunch.
Coconut butter geoduck (Ốc Voi Voi Sốt Bơ Dừa): unique in the best way, rich coconut-butter aroma with a clean, ocean-sweet bite.
Deep fried smelts platter (DIY spring rolls): fun to eat and seriously addictive, crispy outside with great texture.
Mắc khén wagyu skewers: juicy, smoky, and the mắc khén spice gave it a fragrant “wow” kick.
ST25 rice: fluffy, fragrant, and the perfect pairing for everything.
Sweet & sour pork ribs: tangy-sweet done right, not overly sugary, and very satisfying.
Fish sauce caramel flan: I was curious… and it totally worked. Creamy, caramel-y, with a subtle savory twist that makes it memorable.
Humble set: great little combo if you want variety.

Service was smooth and attentive, and ordering was easy. Overall: delicious food, great vibes, and I’ll 100% come back (and bring friends).

Had a really nice lunch here, I’m wondering what differs on the dinner menu. Soup was tasty, steak and eggs were really good, broken rice was pretty good too. Only thing I think they should automatically give you is a knife and fork for the big meat plates, it’s a bit hard to work with chopsticks. But the space itself is really nice, food and staff were pleasant, and you get a water view!

We came to anchovies and salt and met up with the co-owner Calvin.

The interior was created with so much thoughtful and intention to reflect each region of Vietnam. The color concept of the darker color walls, the black fixtures, and the wood really created a relaxing environment with a bold statement.

The Dungeness crab bun rieu was was grounding and peaceful to eat. It included a light tomato broth with the smell of fish sauce. There were meatballs and pieces of Dungeness crab with a side of banana blossom and herbs.

The seafood platter consisted of grilled oysters topped with a generous amount of green onions, raw oysters, steamed clams, grilled shrimp with mươi ot, geoduck in a delicious, warm coconut butter sauce, fried smelt, and a variety of sauces. This platter completed my seafood dreams.

The bo la lot had packed meat encased in crunchy lolot leaves with a side of mam tom. The tanginess and punget shrimp flavor really rounded out each piece.

We also had banh mi bo ne was delicious and had so many different components. It included a large Vietnamese baguette, sunny side up eggs, pate, tender pieces of flat iron steak, cherry tomatoes, and marrow bone with sweet bbq sauce. It was so engaging to rip the bread and make a perfect bite with each component.

And lastly, we ordered the banh flan nuoc mam. The flan was smooth and soft with a hint of caramel fish sauce and a topping of coffee cream.

This whole experience was delicious, brought so much peace and took me back home. I will definitely be back to try more!

My husband and I went here for dinner last night and loved it. The restaurant is beautiful and spacious — it really reminded me of different cities in Vietnam.

We ordered the family-style combo and it was perfect. It had everything we needed and honestly reminded me of home, when my mom cooks and we all sit down to eat together. Super cozy and comforting.

We also met the owner Quyen — he was so friendly and warm, which made the experience even better.
Highly recommend if you’re craving Vietnamese food or want to introduce Vietnamese culture to friends and family.
