In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas. We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. Hello I went to the fm 78 location December 36.2025 for dinner it was 1hr till closed. Was very disappointed I ordered two wrangler plate’s the meat was dry and hard my ribs . were very dry. My sides where messed up although I get Yao all about yo closed if the meat is nasty don’t sell it . I love bill millers but I feel like they have lost there touch . That satisfaction that they should hold high is not just that at all no more . My bread was so doughy it was horrible. Calm on billl millers get it together .

Save your money and eat at an independent, real BBQ establishment. This is terrible and sad.
I have not been to a location in San Antonio in some time because it is usually disappointing. This time did not fail. How this food chain can call themselves a BBQ establishment is beyond me. I lived here from Corpus and though the food must be better since it is made here. Nope, still crap. This sandwich I purchased is the worst excuse for a brisket sandwich I have ever seen. Both the brisket and the sausage were no more than slivers of meat. I have had better brisket sandwiches at a truck stop. There absolutely not pride in how it is made or served. The only location I have found to be different is the one in Pleasanton. Always looks good, tastes good, is plentiful, and the service is outstanding. This location had a nice guy at the window but this food is pathetic and sad excuse for any food chain. It is as bad as McDonald’s now.

I ordered the #4 this is what came with my meal. I did eat 3 fries before this picture but I felt like there should have been more. The food was hard must’ve of got the end of a batch because nothing tasted fresh. I’m bad with public interactions so I rather complain online but at least the pie was good.

Don’t bother ordering online for delivery. They always get my order wrong. Today I ordered a breakfast plate which was fine. I also ordered the biscuits and gravy with gravy on the side and sausage. My drive picked it up and I got the photo of the receipt that says no biscuits. I asked the driver if they offered/gave a replacement. No. So I said I would accept a bread roll. He asked and they gave. It gets here and I have no gravy and bacon instead of sausage. If you cant provide what Im paying for offer a refund. This is not the first time Ive ordered this and not gotten gravy. Offen order unsweet tea is a risk. I get sweet half the time which I cant drink. Thankfully doordash offers partial refund. I dont think I will be ordering here anymore.

I went for breakfast tacos, but unless you’re satisfied with a couple of crumbles of egg and a strip of bacon with a tortilla, then you may be satisfied with Bill Miller’s breakfast tacos. Sadly, the carne guisada was not any better. I hope Bill Millers adjusts the portion sizing because im sure its the company it self making these poor decisions to give tiny portions to the customers to maximize their profits. Maybe its time to stop expecting so much from Bill Millers and completely stop giving our business to them.

This location always fails on quality ! My brisket taco was so dry this morning. All it had on it was old hard crunchy brisket…. No bbq or cheese. This location is lazy and does not care what they feed the customer.

My husband went inside to order us dinner . The soup was only liquid mo veggies definitely no meat, they threw. His baked chicken in the bag no foil or container also they failed to put our slice pecan pie in the bag. 28 dollars wasted! I will be sending this with photo to cooperate with a photo of how our meal was and receipt. Unacceptable!

Went to the drive for some beef soup it was nothing but rice . It was literally rice all the way up . Called spoke to the manager she said that they only scoop one ladle of soup you be Lucky if you get meat with in soup .

After I received my food, I realized I wanted dark meat, and there was a team leader named Beatrice standing next to me and She made sure that I was getting what I wanted. Stopped to get food for my family. While waiting I watched the person who was cutting the meat use the same cutting board and utensils to not only cut the brisket, but also the pork. That is cross contamination. For someone like me, I know that I can never order any meats now, as I am allergic to beef. So, another restaurant I can’t eat at.
