Flavor explosion alert!

I stopped into New Cascadia Traditional and my taste buds are still doing a happy dance. I started with dessert (because why not?) — the rhubarb muffin — and oh. my. goodness. Soft, tangy, a little sweet, perfectly balanced. It was straight-up amazeballs.

Then came the Biancaneve Pizza, and wow… . Every bite was this perfect, mouth-watering combo of creamy ricotta, melty mozzarella, smoky provolone, roasted garlic, parmesan, and just the right kick of pepper flakes. Total flavor explosion. The crust was crisp and chewy in all the right ways — honestly, I couldn’t stop eating it.

New Cascadia knocked it out of the park. If you’re anywhere near Portland and want food that’s both gluten-free and insanely good, this place is where it’s at. I’ll definitely be back for another round!

We had a wonderful gluten free focaccia sandwich. They use the foccacia bread and fold it in half to make both sides of the sandwich. We also enjoyed the scones and bought some pizza crust dough mix to make at home. Our first time here and hope to make it again when back in Portland. They were very accommodating when needed to check ingredients for allergens.

I am honestly so bummed to leave a bad review but I really hope it helps with shifting this place a bit.

It genuinely feels like the cafe does not want customers and I am confused by the decisions made by the decision makers of this place.

In my time as a customer here I have watched this place go through it’s evolutions, but this one, I don’t really want to waste my money at.

In the responses to reviews, I have seen them claim they lose money on vegan pastries and that is why they have limited the amount they make and sell, but — during my time as a customer, every time I am in line, I have heard people in line in front of me ask why they don’t have the vegan donuts, why their only vegan pizza option doesn’t have vegan cheese (when they literally use vegan cheese for the vegan breakfast sando and the pepperoni pizza..??) and why they stopped making certain items vegan. Literally every single time I’m in line, I have heard a verbal complaint from a customer about the food options provided and I genuinely feel bad for the staff that have to sit through and say the same thing over and over again to customers.

For their sandwiches, which is in my opinion, the most confusing part — they don’t even use their farmhouse bread, they use a cheese bread made from their pizza dough which means if you are dairy free, you cannot even adjust the one sandwich option they have to be dairy free. It’s weird because every business in Portland that offers a gluten free option (that’s a good gluten free option) uses their farmhouse bread .. but they don’t? They used to be so accommodating to the dairy free folks and I remember when I first started going here I was SO relieved to find a place that actually had options for me.

Gluten Free spots, like truly celiac friendly spots, are so hard to come by. This place fills a community need for immunocompromised folks and it used to do it in a way that felt truly accommodating and actually catered to it’s customer base. Now, it feels like they sell only what they feel the masses will like and cover everything with butter and cheese.

I understand that running a business post covid is hard and that especially an allergy friendly business is hard — costs are rising, things are scary — but there are ways to hear the feedback from your customers and still be accommodating. GEM and Petunia’s have been able to continue to stay open and still provide dairy free options. I hope y’all find a way back to your roots soon. You literally have all the ingredients to make allergy friendly food, even if it’s just a vegan pizza and a dairy free sandwich, just provide them.

Great food but the service is questionable. They don’t allow substitutions which is interesting for a restaurant branded by accommodation. We went in on a Sunday when it was packed and it took an hour to get our food, which was fine because it was so delicious. We went back early the following day and the restaurant was empty. We ordered the breakfast bagel and tried to add a beyond patty, but they only allow you to add a beyond patty on the vegan version and ham on the regular. We tried to order side of beyond patty separately and they wouldn’t sell it because the register didn’t have a button for it. Just very odd. The choices are mostly vegan or meat+cheese and you can’t simply take meat off or switch out a cheese option. When they say no substitutions they mean it so just keep that in mind.

The people down below that rate it poorly for anything have no idea what they are talking about. I have been here several times and I’m always welcomed and given the best service. The maples bars are so squishy and delicious it’s hard to believe it’s from a dedicated gf bakery! Such great pizza and bread and bagels and so many other treats 🙂 as a celiac I want this place to open a location in my home town of Tacoma!!!

Still very disappointed at how terrible this place has gotten when before COVID it was one of my favorite spots. Very poor allergen knowledge and procedures for everything except gluten. Practically non-existent vegan options (outside of their bread, which is good enough it’s the only reason this isn’t a 1-star review) and the bland oat-muffin which was my only choice for something sweet, and was entirely raw inside. They also shmear the bagels for you without asking and put enough tofutti or cream cheese on them for at least three bagels. Buy their bread if you’re celiac and see it at some grocery store, but cannot recommend going into their actual location for any reason besides masochism.

As someone who can’t eat gluten, it’s really hard for me to satisfy my cravings. But this place is amazing. I’ve been searching forever for a gluten-free donut that isn’t just cakey, and I finally found it here. It’s light, airy, and slightly chewy.

I had the pizza here a while ago, and if I hadn’t known that everything was gluten-free, I would’ve gone back to make sure they didn’t accidentally give me the wrong pizza! I think about this place all the time.

Good: really awesome GF pizza, very good

Meh: limited food options- there was only pizza because after 1pm that’s all people want to eat? More notable was the lukewarm service though. We had to ask for plates, napkins, and cups and with each request were initially directed towards the un-stocked location before the server reluctantly supplied the needed item- not by graciously handing it over, but by placing it at the end of the counter where each item would be if stocked… as though we were responsible for restocking. Every time. It goes without saying that you will wipe down your own table before sitting at it.

The cinnamon rolls here are incredible and I am still thinking about them. My husband and I both had the bagel sandwich with ham and loved the bagels so much we bought some to take home. We also tried the brownie and the coffee cake – both were really good but the hero was really the cinnamon roll. Being a dedicated gluten free kitchen – it allowed me to order anything I wanted and that’s not a feeling I get often. Not to be missed – gluten free or not.
