In 1950, with a $500 loan from his father, Bill Miller opened a small poultry and egg business. Three years later Bill Miller Bar-B-Q began as a small fried chicken-to-go restaurant. Today Bill Miller is a family owned and operated business with 77 locations in the San Antonio, Austin, Corpus Christi and surrounding areas.
We take pride in cooking all our barbecued meats in pits smoked with 100% live oak wood. We offer a variety of meats such as brisket, sausage, bar-b-q chicken, pork spareribs, turkey and fried chicken. We specialize in the baking of breads and pies made fresh daily. First time visiting Bill Miller BBQ, and the experience was amazing! The drive-thru employee was incredibly patient and friendly. I grabbed the #8 Rancher plate, and the portion was huge. The ribs and chicken were delicious, and I loved that it came with three sides—the mac & cheese, Spanish rice, and green beans were a perfect combo. I washed it all down with a large Half Sweet Tea / Half Lemonade that hit the spot. Fast service and great food—I’ll definitely be back!

The quality of food from Bill Millers has deteriorated dramatically. This restaurant used to be my favorite over 30 yrs ago. They had limited locations so they took pride in their craft.
I was gone for over 20 yrs because of the military but in the early yrs, when I came back to visit SATX, this was my go to place.
When we came back to live in TX, we went yo the one on 35 and the food was cold & bland. The pecan pie which I had liked more than Cracker Barrel was gritty and tasted like flour. That was 2018.
So in 2025, I wanted to give them one more try. We went up the one on 290. I ordered a poor boy Plus extra lean. This means XTRA MEAT than the usual poor boy. I have always ordered this in the past. I don’t know what I got because this was not a Plus poor boy.
They used to give you sauce with the poor boy. I got nothing this time. I had to ask for it.
When corporate greed surpasses the quality and love of their food, it’s time to go.

This place always has the BEST breakfast tacos ☺️ We come at least 2x a week. Consistently delicious and well seasoned. The sweet tea is consistently fire. Always met with a friendly face. The manager Ms. Bahena is the best to chat with and always helpful. She always takes great care of us. A faithful customer of this spot because of her!!

Hard to see in the pic but 2 long hairs in the bottom of my green beans. Overall not terrible but I’ve had way better in a lot of places but they all take way longer to get to. Would have been a solid 3 of not for the hair

Got the #1 yesterday. Paid $12. Disgusting. Bbq sandwich was nothing but fat. It was like eating an ever so slightly smoked bubblegum/lard sandwich. At least the young staff at the front were well mannered.

Pretty good. Skimpy portions and the order was wrong which was annoying. Got a few different tacos for different people and they weren’t labeled which was a huge pain. Upcharged for a drink to a large size when I ordered a small. Could have been a lot better honestly.

I often pick up Thanksgiving turkey and pies here for parties. The pumpkin pies are the best, and a crowd favorite. The turkey is a great secondary or primary turkey for fans of a smoked flavor. The seasoning is simple salt and pepper, and smoke, this can be added to at home when you reheat. The price, for two pies and the turkey, was about $100. Sides can be added.
