Excellent American bistro in the heart of downtown Castle Rock. They have an extensive menu with unique handmade craft cartels as well as many locally made craft beers. They had small plates to share as well as flatbread pizzas and larger full entrees. They also have an extensive section of wonderful salads. They also have handmade pastry chef created desserts. We had the beef tenderloin flatbread pizza, their signature union burger and the salmon and arugula salad. All of these were excellent. We also ordered a piece of the coconut cream pie and it was outstanding!! We definitely will be back!!

Fantastic Happy Hour bites and drinks at great prices! The drinks were beautiful and tasty. The food was also beautiful and delicious. The service was great, everyone was so kind and attentive. I am so glad I found this restaurant and will absolutely be back.

We recently had a work lunch at Union Bistro and it was great! Tyler a very attentive and my iced tea was always full. My grilled chicken salad was absolutely delicious! My colleague preferred the chicken lollipops and really enjoyed them. Great atmosphere for lunch, and I can’t wait to go back for dinner!

We had a great experience here. Our server was really friendly and understood my dietary restrictions. I was able to order several gluten free dishes and didn’t get sick. The food was delicious. I ordered the Brussels Sprouts, Pork Green Chili soup, and The Chop. When I’m back in Castle Rock, I will definitely come back to eat here.

The Charcuterie Board and the Fish Tacos are very good! Been to this restaurant twice, both times an outstanding experience! Service is very good as well! I definitely recommend!! We will return even with my comments below
My only issue is that this place automatically charges a 4% tip to the kitchen. My thoughts on the matter are pay your kitchen people property. I tipped the waiter 20% plus 4% for the kitchen. Tipping is getting out of control.

We went here on a Friday and we couldn’t eat meat due to Lent so they had lots of options. The Brie plate appetizer and calamari was a great combo and it made us full already. The salmon was great and just the right size. The tacos were flavorful but we had to take it home because we were full.
The service was fast and the menu was great because they had happy hour as well as discounted appetizers because we had an early dinner.
There was a dining area extending the restaurant but we opted for the area by the bar as that area had the discounted drinks and apps.
The server was knowledgeable and kind and we really enjoyed ourselves.
Left one star out of atmosphere because parking was annoying.

The sweet spot for me is consistency—and this place nails it. Honestly, we’ve never had a bad experience. We were looking for a spot to celebrate our anniversary and are so glad we chose to stay local. It’s great having a nicer dining option close to home. No regrets skipping the overpriced steakhouses—we had a fantastic dinner right here.

Union is an amazing restaurant! My family and I love to come in for happy hour, and when we found out that they serve brunch we had to check it out. They have a great selection of items, really good brunch drinks, and they are very affordable. On top of that, the atmosphere is always amazing, and the whole place is very inviting and welcoming. If you’re looking for a brunch spot on the weekends in Castle Rock, this is the place to check out!

We visited Union two times in as many weeks. Both times we sat in the bar and had the same server. We ordered the Po-Boy Shrimp and the Beef Flatbread. Obviously, because a Po-boy, by definition, is a sandwich, we thought that was what we were getting. At Union, it is just breaded shrimp in a bowl with 2 sauces. The first time the sauces were on the side and they were actually great. The second time the sauces were on the shrimp, so I ate those and we ordered another round of them for my friend who doesn’t like sauce. For our first visit, our server dropped the food and was never to be seen again until he brought the check. Two other servers refilled our drinks and cleared the table.The second visit, he dropped our food and was semi-attentive, but never asked my friend if she needed a refill on her drink. He did refill our waters this time. He dropped the check, ran the card, and brought the check back again. All the while, during those three visits, he never removed any of the SIX dirty dishes. The restaurant was not busy at all during either visit. These are basic server duties and there is really no excuse. There is a lot of competition in Castle Rock these days. Union might want to step up their game.
