If you’re looking for the gold standard of Neapolitan pizza in Denver, Marco’s Coal Fired (Inverness) is the absolute real deal. They are one of the few spots in Colorado with the official VPN (Vera Pizza Napoletana) certification, meaning they follow the strict, traditional rules of pizza-making straight from Naples.

A Masterclass in Coal-Firing
​The pizza here is truly amazing. Because they use high-heat coal-fired ovens, the crust has that perfect “leopard spotting” thin and soft in the middle with a beautifully charred, airy rim.

​The Wings: A Hidden Gem
​While people come for the pizza, the Wings are what they stay for. They are coal-roasted (never fried). They are juicy, tangy, and have a smoky depth you just can’t get from a standard deep fryer. They are easily some of the best wings in the city.

​The staff here are awesome and really know their stuff. Whether you’re asking about the difference between the New York and Neapolitan styles or looking for a wine pairing, they are attentive without being overbearing. Took the family out to dinner. Heard Great things about the gluten free pizzas. My mom and I struggled with celiac disease. So it can be hard to find a place to eat. Marcos did not disappoint. Prices are pretty high but we enjoyed everything we had. My father had the meatball sliders and a plain pizza. He had really enjoyed how well seasoned everything was. My brother had the eggplant pasta. He ate every last bite. Didn’t leave anything on the plate. All our food came out nice and piping hot. My mother and I had our gluten free pizza and they made sure to take our allergy very seriously. I will say they could possibly cook the dough just a bit more. That way it has a bit of a crunch to it. They offer dairy-free cheese. We also had dessert. The pancetta it was pretty good. I liked the sweetness and the lightness of the cream and the sauce of the raspberry. Our waitress was very sweet and very accommodating. She had some good recommendations and check on us often.

We love Marco’s Coal Fired Pizza in Centennial, especially their gluten free options. I have yet to find a gluten free pizza that is as consistently good as the one at Marco’s and their sister restaurant, Dough Counter.

We have been ordering from Marco’s for many years, even through all the name changes, and it has always been one of our favorite spots. Now that we have a three year old who is gluten free and has pizza day every Friday at school, Marco’s has become even more special to us. Every Thursday night we pick up pizza so she can bring it the next day and enjoy pizza with her friends. It reheats beautifully and makes her feel included in the fun, which means a lot as a parent.

We also love their creamy parmesan sauce and the consistency of their food. On top of that, the fact that they offer vegan options and vegan cheese for my husband, who is dairy free, makes Marco’s an easy choice for our weekly pizza night.

Great food, great options for dietary needs, and a place our whole family can enjoy. We are longtime fans.

Update 2025-06-15 review update for Father’s day meal. It’s still overpriced and overrated. If the gluten free pizza wasn’t a hit with my family because of the dough, we would never come here. The lasagna sauce needs salt and just lacks flavor, the garlic bread with cheese was dry and bland. The food, tastes way too much like char and ash, and the crust on the edge of the pizza is tough to bite. The eggplant just tasted wrong and was thrown out. The wings actually were actually good though. Would still pass.

Overpriced and overrated. Just pass…seriously

Small 12″ Brooklyn pictured for $20. The pizza is slop like somebody just threw toppings on it. In the pic you’ll see all the toppings grouped in the middle, and other areas, and what do you get? A cold wet center. The pizza is so thin, it’s limp unless you fold a slice in half. This is normal for Marco’s FYI. The pizza is also ashy making some bites really unpleasant.

Ever wonder why the pizza you’re picking up or having delivered to you is cold? It’s because after cooks are done baking the pizza, they put the pizza in the pizza box UNCUT with the lid open on the counter letting it cool down, until somebody in the front room has time to review it and cut the pizza. Can somebody tell me why the cooks can’t cut the pizza and close the lid, then somebody in front can quickly open the lid, make sure it’s the right pizza and cut the pizza. I saw this when picking up my pizza which was easily sitting out for 5 minutes when I asked the manager why the boxes of pizza are sitting open and he gave me that response.

The only reason we ever order here is because family likes the gluten free pizza, which is why I didn’t give this place a 1 star. It’s hard to find a good gluten free pizza place.

Been working by this restaurant for a while but never had time to stop in until today. Pizza crust was crisp on the bottom, chewy in the middle and topping were great. Great atmosphere. Plenty of natural light. Clean. Stephen did an outstanding job at the bar. Highly recommend if you’re in the area. Top notch!

Marco’s is a gem! The wife and I have been coming to eat here for years. We recently moved out of state any any time I’m back in Colorado for work I stop by.

For those that are gluten intolerant, this pizza is like nothing you have eaten. No crumbly or gummy crust. This is so good the first time we double checked to make sure it was not regular crust.

My fav is the Queens (vegan) with pepperoni. Don’t hesitate to stop by and leave room to try their desserts!

Keep an eye out for Marco. He is a friendly and genuine as they come.

Marco’s Coal Fired is such a wonderful place to visit for lunch, after work for dinner and for their happy hour. Laura, Stephen, and Helen at the bar, are always very friendly and provide such great service, along with the rest of the staff! Definitely a must for lunch or dinner, with friends and/or family!

Very disappointing. Where to begin? First, this isn’t ‘real’ coal fired pizza. At least that’s not the pizzas we received. It was floppy, wet, and very undercooked. The pizza dough almost tasted like it was packaged or had been prepped and sat around for some time. Second, the wings were too covered in sauce. People come for coal fired food to taste exactly that. When your food is being masked with other stuff, you’re kind of not giving real credit nor attention to your craft. Finally, next time have your salad come out with some tongs. It was actually the best thing served to us tonight, but the fact that I had to use my own set of forks to serve myself was silly. The salad being fresh and loaded with yummy veggies is what saved this from being a one star review.

Overall, I would not recommend this place. It’s overpriced, but I’d be willing to still pay if it was good food. It wasn’t, and they are very much puffing themselves up with saying they are all about coal fired when they really don’t know at all the craft of it. Cook the pizza little longer, my goodness, coal fired is well done pizza. Fix it!

P.s. don’t serve your pizzas when your guests just got their salad and appetizers. Very simple rule of thumb.

If I could give Marcos more than five stars, I would. From the moment we walked in, Katy the hostess welcomed us like family—warm, genuine, and smiling like she owned the place in the best way. She set the tone for what turned out to be one of the best dining experiences we’ve had in a long time.

Our server Tiki was a total rockstar. Attentive, upbeat, and full of great recommendations. She made sure our drinks were full, our table was clear, and our hearts were full too.

And don’t even get me started on the food. The woodfired pizza was absolutely next level. But here’s the part that most places can’t match—the cooks at the oven were incredible. Not just skilled (you can taste the craftsmanship), but cool, friendly, and totally in their element. Watching them work was part of the experience. Flames dancing, dough flying, smiles all around.

Marcos isn’t just a pizza spot. It’s a vibe, a family, and a flavor all its own. Big thanks to Katy, Tiki, and the entire crew behind the scenes. We’ll be back soon and we’re bringing friends.
