Fantastic. Mellow Central American vibes with Michelin-style tasting menu. Each course was tasty and interesting. It featured a lot of seafood but mostly light dishes (white fish, shrimp, etc) which were very approachable. Skipped the wine pairing for a Geisha Old Fashioned and Jungle Negroni. Both exceptional. Left feeling fairly full which is rare for me. Pour-over coffee came included with dessert course.
Overall an outstanding dinner in every way. Would be 3x this price in the US. Highly recommend.

Reserved for dinner based on excellent reviews. A bit of hiccup when we got our table. Seated right by a big group of people who seemed having too much fun. Couldn’t even hear a word of what our waiter said. As per our request, the manager took us to another section and assigned a bilingual staff for us. From appetizers to main courses, dishes were delicious. It showcased thoughtful creole cuisine to honour the legacy of Asian workers who helped build the canal. Most impressive was the one-pot rice dish. In one single dish, the chef magically mixed a variety of meat into perfection that gave differing flavours and textures. Also loved my Geisha Old Fashion! Thanks Derek for outstanding service!

This was my girlfriend’s favorite restaurant in the city. She loved how the seafood was prepared, and this stands out because she eats seafood nearly every meal. The prices were quite affordable considering the quality. I had vegetarian dishes, and they were rich and delicious, just not on the same level as her plates.

We made a reservation weeks in advance at Maito in Panama City to celebrate our “friend-a-versary.” The day of, Maito asked if we wanted the tasting menu, and I said yes after they confirmed they could accommodate my minor allergies like mushrooms and raw foods. We were really excited! We got there early and they took us to a bar area for drinks. A little past our reservation time, they went to seat us, but not in the tasting menu area. When we asked why, they said they couldn’t accommodate us or my allergies. I was surprised because I had it in writing (thanks, WhatsApp!) that they could. I went to show the host, and he was like, “Oh yes, that’s no problem, we don’t do raw food here anyway.” Then an HOUR went by. I went to check in, and he said it was taking so long because of allergies… he totally gaslit us. What we think really happened is they made a mistake and gave away our table, and instead of confessing, they just kept lying and saying “5 more minutes.” Then they moved us to a table meant for 10 people – there were only two of us! Thank goodness the sommelier came by; when we explained what was going on, she made it right and had us seated and eating 15 minutes later. Because of this, I can’t recommend this place. There was no mention of our friend-a-versary either. The food was good, but not worth being gaslit over or the hour and fifteen minute wait.

We had a very lovely experience, a couple of friends were visiting Panama and we took them to Maito. We all had the tasting menu, which was amazing. We had tried the tasting menu a year ago and didn’t love it, this time around they elevated the menu and each plate was better than the last one. Good value for your money. Our waiter was great, explained every dish in English which made the experience for our guests even better.

Outstanding food and service on their beautiful patio. The menu is a bit intimidating, with no specific descriptions of the dishes, but our server described each dish to us in detail, helped us determine how many dishes we should order to share, and recommended several dishes that we enjoyed. Cocktails were creative, tasty and beautifully presented. We would return in a heartbeat.
