Tonkotsu Brighton is located in the heart of the Brighton, just a 10 minute walk from Brighton train station. Our restaurant is next door to the Royal Pavilion, and the Brighton Dome, an iconic performance venue. The seafront and Brighton Pier are also just a short walk away and we’re close to the historic Lanes.
As always, we put our heart and soul into every bowl of ramen – making our noodles, broths, katsu curries, gyoza and sides from scratch. We have vegetarian and vegan options and our restaurant is dog-friendly!

I went here at noon, found the lunch set for just 10gbp. The ramen was delicious! The restaurant was spacious and very lovely. The staff was nice. I just love how valuable the lunch set was. If you are extremely hungry, I would recommend upgrading the ramen size. The lunch set serves only on weekdays tho. All in all, I really recommend this ramen restaurant.

Even at this time, the restaurant was packed with customers.
I ordered tonkotsu ramen and Karaage.
The Karaage tasted like the simple fried chicken I eat in Japan, and it brought back memories.
The freshly fried batter was crispy and delicious.
I wasn’t sure if the ramen was tonkotsu, but the soup was thick and creamy.
Tonkotsu ramen is usually made with thin noodles, but this was faithfully recreated.
The chili oil on the table wasn’t too spicy and was perfect for changing up the flavor of the ramen soup.

EDIT: Response to Owner. Thank you for replying however with all due respect, it shouldn’t fall on the customer to provide your staff a liveable wage, that ownership should be on you. Increase menu prices if necessary so that it’s transparent for the customer before ordering. Matter of fact is people DO get embarrassed to ask to take service charge off, regardless of whether there is judgement or not. In this economy, everyone is fighting for an increased living wage, not just restaurant staff.
REVIEW: Decided to try the vegan chilli tofu ramen because their website mentions that the noodles are handmade. Was left very disappointed, the noodles just tasted like packet noodles, broth was sweet and lacked the umami flavour Japanese food is known for. Even their chilli oil didn’t help much, for some reason it was just not spicy. I really really wanted to like this place, even went for their large portion and extra toppings, but it overpromised and undelivered, I’ve had better noodles and sides at chain restaurants which is saying something. I was also really annoyed by the 12.5% service charge they added. If customers want to AND can afford to, they will tip your staff, please stop enforcing it on your customers! People like me get too embarrassed to ask to take it off the bill, and restaurants know this and purposely use this tactic to get more money out of their customers.

I had an outstanding experience last week at Tonkotsu in Brighton! The staff were super attentive and friendly, particularly Dani and Tyler, which really added to our evening. I can’t recommend the silky chilli tofu ramen, deep fried enoki mushroom and gyozas enough! There were so many vegetarian options, and we were with the spiced ginger saki – thanks so much

loved it here! my partner and i went for our anniversary and it is now one of our more treasured nights, all thanks to the amazing staff working that night! georgia and seth were so lovely and helpful, providing great service and were so nice to talk to! the food and drink all arrived quickly and was so GOOD!! one of the better meals we have had out thats for sure, thanks again guys, you were so cool 🙂

Me and my boyfriend went for a meal here today, and the food was excellent! I asked for a change in my dish as I’m pescetarian and the server was so helpful and sweet and recommended me the options! Seb, our other server, was so friendly and helpful! Dinner with a smile- would definitely come back.

EDIT: I know that the chicken used is thigh meat, and there were pieces of cooked thigh meat in my meal that had a pink tinge, this is not a problem, but there were also pieces of uncooked thigh meat. It is easy to tell the difference by the texture. I 100% had raw chicken in my meal.
Ordered on Deliveroo the chicken katsu curry – chicken was raw. NEVER again.

The food is wonderful, had 2 type of ramen,gyoza and cazcabel cocktail.
Georgia has been one of the best server I have ever had.Give her a pay rise please. Whatever she gets payed is not enough.

We decided to try this place from recommended. The restaurant itself is very clean and decorated well. I had to ask the person serving if the air conditioning was on as it was so hot inside. She said no, then put it on. We were left for a very long time before being asked what we wanted to order. Then everything came out very fast and had to make room for everything on the table. The Tonkotsu ramen was very salty. I left most of the juice. The wings were very good! We ordered more as it was happy hour for wings and cocktails. The other server was lovely and because we were in a hurry to leave (we had a show to attend) did her best to get the bill ready for us as we were already away from the table and asked her by the card machine. It was not cheap but it is very filling and has some good quality of ingredients.

Dani was our server, she was super kind and patient with us and the food was INCREDIBLE, my friend was gluten and dairy free and Dani helped us with the options and making sure we were all good throughout the evening, I’d definitely recommend coming here !
