MO Hillbilly
The Hillbilly and Mrs. HB met up in town for some Mexican. And El Maguey was centrally located, so off we went.
The building was once a BBQ joint named Trotters. They were FAMOUS for their HUGE sliced brisket sandwich and their pies. Needless to say, the building is on the old side, but I think they’ve done a nice job fixing it up.
The service was great. But the reason I like El Maguey so much is The Diablo Burrito. It is exactly at the top of my “spicey tolerance.” And their prices are reasonable.
I feel El Maguey is a solid choice for lunch or dinner.

Food is average, salsa was good but had zero spice. Service was extremely slow, to the point we almost left before our food arrived. Most flavors were standard, nothing special.

Every time we visit for our office lunch we put an order in for 4 plus people. Our food is always hot, delicious, and affordable. When I go to pick up our food I am always welcomed like I’m part of their family. 10/10 recommend!!!

We ordered 4 tacos to split between the two of us. I thought I read what comes on them. I think they put fajita mix on there because they’re really soggy and like smashed together and there’s onions which I love onions, but my partner does not so he couldn’t eat any of it. I’m not digging the flavor of the chicken. And the chips were kind of too thick, which makes them tougher to chew. I needed a bigger salsa, but I guess they don’t have that either.

Waitress could have been more attentive, she only had one other table but couldn’t keep the drinks full and there were only two of us. Overall food was good.

Friendly staff, food was good. It was not super busy which was nice because we could all hear each other talk at a table for 6.

Out here in Springfiled and tired of being in the motel and got a call from my friend to get out for the evening. I am so glad I said yes.
She and I weren’t sure what to expect because the area leaves a little to be desired, but we were both pleasantly surprised as the restaurant exterior as well as interior. Felt like we were at home really.
I had EVERYTHING lol. I was comfort eating really, but oh well.
Time we walked in were greeted immediately and our host was friendly before he even seated us. He also spoke to us in Spanish which was refreshing! My friend speaks fluent Spanish and is Irish and I speak a little to moderate Spanish so I thought that was pretty cool that he didn’t assume we just knew English.
We were brought salsa and chips and those chips were the BEST chips Ive had thus far. Crispy, fresh, not a lot of salt and just sooo good. I ordered the guacamole, bean dip with queso and the combination fajitas (steak, chicken, and shrimp) and my friend had vegetarian fajitas and queso. Very flavorful. Very!
Try it out. Take a look. Take a taste.

By far the worst Mexican food we have had in Springfield. Tortillas are so thick ! And the salsa tastes awful, like spaghetti sauce

We waited FORTY minutes for our drinks (3 waters and 1 margarita). The margarita was supposed to be frozen. It was not. We waited ANOTHER 45 minutes for our food to come. I ordered a chicken enchilada and beef burrito and received two enchiladas. Absolute slowest and subpar service (Server #9 on 5/05/23) I’ve ever seen. The ONLY positive was a super sweet hostess who seated us quickly and saw that we did get drinks once I voiced my concern about how long we had waited.

Visiting from out of state. The food was really good, not your typical heavy Mexican food, just really good. Plus great friendly service.
