I also want to take a moment to highlight the hospitality. Every single person we encountered was engaging and warm: servers, sommelier, kitchen staff and the chef. It seems like they’ve really built of team of good people which isn’t something you always think about going into a dining experience, but in the end it really elevated the night.
We chose Palma based on its Michelin Guide mention and strong Google ratings, but left feeling underwhelmed.
The restaurant primarily pushes their set menu. Food quality was inconsistent—about half the dishes were bland and less creative than expected given the reputation. Presentation was acceptable but nothing memorable.
Our main issue was the rushed service. Despite the restaurant being busy, we never felt we could relax and actually enjoy our meal. Each course felt hurried, which significantly detracted from what should have been a special dining experience.
The wine selection by the glass was limited—only 2 red options available, which was surprising for this caliber of restaurant.
Adding insult to injury, a 20% service charge was automatically included on the bill despite the subpar service. When service is mandatory-gratuity level, it should be exceptional—not rushed and inattentive.
For the price point and reputation, we expected far better. There are many excellent dining options in Miami that offer superior food, service, and value
Overall we loved the passion, creativity and hospitality! If we were Miami locals, we would be sure to visit this place monthly just to see what chef was cooking up next.
We had a lovely time visiting (in Jun 2025) and celebrating our anniversary. The team was kind, welcoming and attentive! The counter seating gave us front row seats to the culinary show (see pics) and a glimpse into the mind of chef. He shared inspiration for the dishes, fun facts and good laughs!
Their rotating menu features seasonal ingredients from small producers. Our standout favorites:
⭐️ grilled fish – beautiful crust, grouper that melts in your mouth. And the sauce? I licked that bowl clean…
⭐️ plantain bread – the perfect bread does exist.
⭐️ peach – like a palate cleanser, the cream was incredible, subtle, simple and effective with a nutty hint from the candied peanut
As someone who tried many tasting menus, we realize that every chef has their own vision. Our personal taste is more simple with intentional, highlighted ingredients. We felt some of the dishes were explosions of flavor with many creative additions, but we found it hard to find some of the flavors that were mentioned or that the extra ingredients detracted from the overall dish e.g. the coffee and celeriac in the fish broth were tough to notice, and the coconut water sake jus in the ice cream cake.
Highly recommend trying this imaginative tasting experience. You’re sure to be (pleasantly) surprised with the creativity shown through each dish.
