I’ve been a fan of Chef Rubeo for many years and Hudson Valley Food Truck never disappoints. The menu changes often, so if you’re interested, follow them on Facebook and Instagram to see the latest specials and any schedule changes. Here are just two of the meals I enjoyed, and I was patient long enough to photograph these before they disappeared. Highly recommend, and will definitely be back!
The Thai Sticky Dragon “street grinder” had a nice kick from all those jalapeños. There was a huge chicken breast that practically filled the container. The sweet and spicy Thai chili sauce, fresh cilantro, shredded carrot, pickled red onion, and cucumber were so fresh and flavorful. It honestly reminded me of a banh mi. Very filling and SO good.
Yeah, I ordered a lot of TACOS but I shared! They were enjoyed by several of my colleagues too (along with me, of course) and they did NOT disappoint. One coworker literally said, “Not gonna lie… probably the best tacos I ever ate!” I also love how they double up the tortillas and crisp them up so the tacos do not fall apart. Great food, great portions, and amazing flavor.

10/10 for food, service, and vibes. The menu is constantly rotating, so many amazing options to try, EVERYTHING on the menu is excellent. Very fair pricing especially considering the HUGE portions of all the food. You will not be disappointed.
The spot itself is great too there’s picnic benches if you want a nice place to sit outside and eat. Plenty of parking.

Must-try food truck, so glad that I tried it! The food is fantastic; the staff is incredibly friendly and helpful, making the whole experience even better. They have great recommendations. It’s a great spot for a quick and tasty lunch. I’ll definitely be back!

Absolutely the best place to get food. Always something new you want to try, not just something to settle for. Great prices and huge servings. Chicken, burgers, tacos, and soup always something different. This is a must if you want good food.
