Google says they’re temporarily closed. I’ve eaten at their truck 3 times in the last week (twice in one day). I wonder if they’re temporarily closed because they’re out at the Cron serving bomb, non Sysco foods to the men and women building that massive facility. But they’re not there everyday, unfortunately.
Had tacos and burritos. Carne asada is my fav, pork coming in close second.
A red and green salsa that are exactly what you want: delicious with a bit of heat. I don’t think their Cron menu is their full menu but maybe it is. If you get the chance I highly recommend the asada burrito. Get some salsa. That burrito is the size of a stack of tuna cans. Filling with homemade quality. Very nice folks. I’ll eat here at every opportunity

This is my second taco food truck that I was told served carnitas. The gentleman was very nice but he told me they don’t serve carnitas. He said it taste similar but the process he can’t call them carnitas. I told him ad I understand the process and appreciate his honesty. He offered me their style of prom tacos which he told me it is very similar. He was not kidding as their pork street tacos were just as good if not a bit better than most of the carnitas tacos I have tried here. I rarely give out a five star rating but because of the man’s honesty and really good pork street tacos he has earned a five star rating.

It’s not a big selection, and they aren’t your standard street tacos, but they are really good.
They have Asada, Chicken, Pork and Chorizo & Potato (that’s both chorizo and potatoes in one taco)
It’s a whole plate of deliciousness. The only one that wasn’t amazing was the asada, that one was kinda plain, still good (good cuts, very lean), just not great.
Chicken- cumin/adobo flavoring, really-REALLY tasty, and I am rarely excited about chicken tacos.
Pork- not carnitas, not Adobada, similar to asada, just pork… so better in my opinion. Good taco.
Chorizo y papas- this is the one that my buddy Milo recommended, it’s great. The chorizo is good and the potatoes are diced small and off to the side so that you can add them (I ended up adding them to a few of the tacos). These are better than Andrades chorizo and potato because over there the potato chunks can be too big.
Even though they only have a few tacos, they’re so good. Definitely worth trying.

Tried their tacos for the first time today. They are priced a little high for street tacos but they are fantastic! Tender meat full of flavor, no grisly peices. The salsa was spicy but not too hot. I usually eat 6 or so street tacos but 4 was enough to fill me up. I’ll definitely be going back!

This is my first time visiting Pop’s, and I wish I’d eaten here sooner, this place is awesome! I think I just discovered my new favorite burrito van! I ordered the carne asada burrito, and it is fantastic. Lots of flavor, some decent heat (red sauce), and you can tell it’s made with fresh ingredients. I wasn’t sure about the diced potatoes, but they pulled it off. Cheese is extra, but it already comes with sour cream and guacamole, so I didn’t really miss not having cheese. Ask in all, a great burrito, I’ll be back and you should visit too if you’re in the neighborhood.

I’ve seen great posts on Boise Food Finds about this place and have wanted to try it ever since. I finally got to swing by today and they did not disappoint! Me and my husband had the carne asada burrito and our littles shared a side of potatoes. Large portions and very delicious. The best carne asada burrito I’ve had in a while. We will be back!
