Veteran-founded restaurant and food truck serving amazing bison dishes such as: Bison French Dip with Au Jus; Bison Pastrami; Bison Burgers, Pueblo Green Chile (yes, Chile not Chili – true lovers of it know…), and more! Our roast bison is slow roasted for 7-8 hours and our pastrami is made in-house with our special recipe and also slow roasted for hours to be pull-apart tender and delicious. You can find us at the Fuel and Iron Food Hall in Pueblo, CO and we also have a food truck that comes out from Spring to Fall.

Looking for a good place to eat we wandered into fuel and iron. The bison burgers looked good. I was super impressed. The bacon was real. The meat was seasoned! And I don’t mean burn your taste buds off ala pueblo style. But the burgers were great! Even the fries had some seasoning and not just salt. The apple pie bits with ice cream was a delicious topper. Will come again!

Glad we stumbled upon this place. We had the Bison Bacon Cheddar Melt and the Bison French Dip. Both were tender and very tasty. Also excellent fries. Good friendly service too.

The service was excellent. Very friendly staff. Food was delicious. I got the mushroom burger with fries. Instead of the bun, I got lettuce. The burger, mushroom & Swiss combination along with the pickles were a hit for me. And the fries were amazing. Hot, crispy on outside, creamy on the inside and seasoned to perfection. A very good meal after a long day.

My husband and I ordered the Colorado burgers (featuring goat cheese and Pueblo chilies) and the House Made Chips (potato chips). The flavors were absolutely delicious! The buffalo meat was lean and cooked well, but I think the burger could have been even better with a touch of extra juiciness—maybe a sauce or some other element to enhance the moisture. Overall, it was a great meal!

We weren’t happy. Very gamey and not a fresh taste especially for what we paid. You would think you’d be going to a buffet with these prices. Plus the young gentleman we sat near laughed and told us some stories of the owner when he saw our choice eating here. He mentioned he wouldn’t eat here if paid.
With that the burger was dry and the goat cheese was missing. The fries were good. The French dip was a miss as it had a bad aftertaste that even our beers couldn’t get rid of.
All in all wish we would have not skipped over the other places to eat. But now that we know, we won’t be back. Oh and back to the stories from our neighboring table friend. He mentioned being at some outdoor seating place when they were a truck (food truck im guessing) and getting yelled at by the old man who is the owner about the prices and how he was missing tomatoes on his burger. I guess the owner had a bad day and decided to take it out on him so much his face turned red and veins popped from his neck. He then said he didnt even get around to mentioning a hair in his food as he was already being yelled at.
To say it again we won’t be returning. On our way out someone stopped us to ask what we had and we told them and we told them to go elsewhere. They laughed and said something along the lines of we already know about them. So that is our 3 strikes for the night. One from the restaurant themselves two from our table neighbor and the third strike from the young couple entering as we were leaving. High hopes cut short we cant win them all I guess

I booked their food truck for my wedding this last weekend and these folks are amazing. The food was incredible, best wedding food I have ever had. Chef Chuck made sure that everything fit my budget and was perfect day of. Chuck and his team were incredible!! All the food came out on time and was delicious, so good that everyone gave him and his team a standing ovation that was more than well deserved. They made our wedding day so perfect. If you are looking for a food truck for an event or wedding just give them a call, they take a lot of pride in what they do and it shows in their cooking. They are also veteran owned/operated which means a lot to me coming from a military family. It made me happy to support their dream when they have sacrificed for us to have our American dream. Thank you guys for your service and for making my wedding unforgettable! Congrats on the restaurant as well you guys deserve it! <3 Thank you to everyone at the Hungry Buffalo, we love you guys!

Friend took me here in September for lunch. The Buffalo burger and fries were excellent! We had to go to another restaurant for ice tea and diet coke. The food court had a good vibe. I like the art gallery.
