First the food was fabulous! We came on Valentine’s night and the specials were beautiful. Drinks were delicious and also nice looking. Portions are smaller but I feel like that is the vibe. The main I got was stunning to look at but was even better to eat. I knocked the score down based on the kitchen being slow like really slow, 45 minutes between the appetizers and main slow.. and the atmosphere was a little chilly seated by the door. Other than that I would 100% go back because of the food quality and the wait staff were all very nice, so thanks for making our first married Valentine’s Day special!

A new experience for us in Denver. Pasque, located inside the Populus hotel, was a great find. Everything from the atmosphere, food and service was excellent. Mark Anthony was our server and besides having incredible table manners, he told us all about the architecture of the hotel itself. It’s the only carbon positive hotel in the country. We will definitely be back since we didn’t have time to try the desserts!

We came for the NYE buffet and it was the most disappointing dining experience I’ve ever had. The reservation mentioned “jumbo crab legs” and instead they served small crab salad dishes. The prime rib was ice cold due to lack of proper heating. The bread rolls were stale, the pasta was average, the macarons were crunchy and hard, the pot de creme had the consistency of liquid, and the cookies were hard and stale. The staff were nice enough but we spent over $300 on this meal. I am extremely disappointed and feel like I was scammed.

Wild. Stumbled in here on a quiet weeknight, some of the best food ive had in a while.
– Hamachi Crudo, huge chunks of yellowtail and an amazing orange twist to it, lots of freshness in the citrus
– Bison Loin, was ABSURD. Im usually more of a fattier meat kinda person but this blew my mind.
– Persimmon Creme Brulee, WHAT
And thanks to Mark Anthony for the best Old Fashioned in ages, or maybe my life and the BOH for making me food even though I slipped in a few min before last call.

Arrived today around 12:15, without a reservation, and were promptly and courteously seated. My better half and I got a gorgeous little half-round booth, and the service was absolutely excellent.
We were seated by the general manager, who told us a little about the building on the way to the table.
The brunch menu was limited, and fantastic. I love to see a small, well-curated menu, and this was it.
The French toast bread pudding was to die for, and be hungry if you order the burrito.
The food was brought out by the general manager, and everything was absolutely perfect. From presentation to taste- it was a great brunch experience.

Came in on a weekend night and it was on the quieter side which was kind of nice. Great and inventive cocktails. Would recommend shared plates since lots of great small bite options to try the different flavor profiles.

Amazing trendy restaurant, with highly curated menu. The staff is amazing and very helpful. This is a fabulous place for a formal dinner with a variety of food options. We got the bass, bison, chicken and crab soup. For apps we got the beignets and scallops. There was no leftovers taken home as the food was too amazing not to finish. The potion sizes are perfect for one person, which room to shake with others. I cannot suggest this restaurant any more as it is amazing. The views of the capitol are beautiful. The interior is highly polished and rustic. Coach check is available!!! Again, this is one of my top restaurants this year!!! Oh I did get reservations, but there was plenty of tables open if you want to walk in!

Came here for brunch (I believe it’s available Friday-Sunday) and absolutely loved the experience! We made a reservation just in case but there were tables open so you may not have needed it. We were greeted with friendly staff and seated immediately. Loved the vibe and learning about the Populus hotel from the bartender!
Ok so the food. We ordered some coffee, got the Citrus cured salmon wild toast, and the French Toast bread pudding. Then we saw the table next to us order the Savory Beignets, and decided to give it a try – it actually might’ve been our favorite thing we ordered! The only complaint was that we waited a while until the food came out. They didn’t seem that busy so was surprised it took a lot longer than expected. Would definitely go back to give it another try though!

I went to this restaurant in the Populus hotel in downtown Denver for lunch with a friend. The restaurant is on the main floor to the left just as you enter the hotel. It’s stunningly beautiful by day with the light coming through the arch shaped windows. The decor is natural looking with woods and plants. The staff was very knowledgeable about the origins of their food and the history of the hotel. As an appetizer we had the savory beignets. Really delicious sauce. The ruby red trout was completely tender and non fishy in taste. The drinks were beautiful and tasty but we did not order their signature drinks so I cannot speak for those. Maddy was our server and she was very knowledgeable about the food and the hotel. She told us that the hotel is carbon neutral and they even compost their food scraps on site. 1% of your meal is donated to sustainable farms and they source their food from them as well. Definitely a unique restaurant and hotel. You can take advantage of the valet in front but the cost is $10. The restaurant does not comp the parking.

I’m sharing my experience, including photo evidence. I ordered the dessert, and it contained inedible item, a piece of paper. The kitchen resent the dessert, but the second serving also contained paper fragments. I inadvertently ingested some of the paper and later experienced significant stomach pain. This is a serious food safety issue and reflects poor preparation and a lack of attention to detail. Overall, the experience was very bad.
