A collaboration of Pacific Northwest ingredients and traditional Chinese ingredients to make a beautiful harmonious bowl of noodles. A noodle passion project turned into obsession. Absolutely incredible. I’ve been looking for a spot like this. Spice level was great, the noodles were a masterclass, meat cooked perfectly. The soft boiled eggs (I’m always worried they will be overdone) were sublime. The pancake is salty, tasty and a wonderful add on to enjoy the ample juices when your bowl is nearly empty. You want to eat this food.

I don’t normally give 5 stars across the board, but I was very impressed by Streched this evening. Located next to Coldfire Brewery Stretched is a food cart that has some serious flavor! This food cart offers Asian style noodle dishes. Every order comes with made to order stretched noodles. I had the Beef Cumin dish and was blown away. Some places offer spicy food, and that’s all you get … spicy. But this dish had a spice kick and you could really taste all the spices. The lady told me they source the meat from a local farm. It was very tender and juicy. All the ingredients were fresh and I’d recommend Streched very highly! 5 stars

It’s a five-star phantasm ! Absolutely superb! My new Flave! “Stretched” is a wonder of culinary delights!. I found this fantabulous food-cart while perusing “noodles” while surfing the Interweb relating to Eugene. When my 12-yr daughter saw the videos and pictures she said “and why aren’t we already there?!” Y’all this no food-cart, it’s a four star restaurant!!!!

I am So happy I decided to come here after a recommendation!
A few days ago I was talking to someone about how much I’ve been craving authentic hand-stretched noodles ever since working at a restaurant years ago that made them, that sadly closed down.
I was pleasantly surprised to find that an old co-worker I used to work with at that very restaurant was the owner of Streched! Crazy!
If you want authentic hand-stretched, delicious noodles and this is the place to go!
Needless to say I’ll be coming back very soon.
(Sorry you don’t get a pretty picture, I had inhaled about half of it as soon at it got to the table )

i had the tomato egg biang biang with added bean sprouts and it was just, such a delicious mix of savory flavors in my mouth.
plenty of covered seating nearby. we went on a thursday and i don’t know the exact schedule of this, but there was bingo being played which was a fun surprise.
SERIOUSLY the noodles are great. you gotta come here and try ’em!
