Tried the signature bibim bap with bulgogi beef today. It was very tastey and the portion was huge! She also gave me a fried mandu to try which was great. It wasn’t rly a traditional bibimbap, more of a japchae over rice with a ton of meat (they also have chicken and spicy pork)
Definitely give this one a try if you see it. I caught them outside of the BX but they’re usually there or by the Mascoutah/Shiloh gates

i wanted to love it but i couldn’t, we ordered bulgogi but it was covered in a yumyum sauce and my family was very disappointed, we wanted bulgogi but got a korean flavored beef that was covered in too much sauce. it also made the rice soupy.

I arrived at Seoul Mom around 1pm one afternoon, not long before they were closing for the day. The owners couldn’t have been more friendly and welcoming. They even gave me a hot and fresh fried dumpling to eat while I was waiting, and it was delicious!
I ordered the signature bibim bap with bulgogi beef and it was absolutely delicious; loaded with fluffy white rice and chewy, slurpy rice noodles. The beef was surprisingly tender and packed with flavor. It was served with sautéed onions and and green bell peppers which were cooked to perfection; tender but retained a slight crunch. Everything was respectfully smothered in two sauces: a gochujang Mayo, which was creamy and tangy, and another spicier red sauce, which I’m not exactly sure what it was.
The entrees are a little on the pricey side, but completely worth it! The portion was MASSIVE!! The signature bibim bap was easily enough for two meals. So don’t let the price discourage you!
I would highly recommend Seol Mom to anyone!

Awesome food truck!! I got the Signature Bibim Bap with spicy pork. It had rice, jap chae, veg, kimchi, and their sauce. Great combo and tasted delicious.
