Nuestros platillos emblemáticos son las enchiladas, que son sumergidas en chile rojo y freídas en aceite para posteriormente rellenarlas de queso, ponerles repollo y sus riquísimas salsas ó la morisqueta que es arroz blanco, frijoles guisados y costillas de puerco en salsa roja. French cuisine also has this distinction. The “Michoacán paradigm,” which was selected by México to represent its cuisine in general for the honor mentioned above is represented by its culinary tradition from food production and procurement, to its preparation and execution.
Rinconcito Micoacano “Doñaby” which opened just about a year ago, does an exceptional job of bringing the “Tierra Caliente” style from Michoacán to Los Angeles. Not only does their humble food give you the chance to taste the best examples of Mexican cuisine but their attention to “detalles” or “details” makes the food very much homemade!
Doña Abigail or Doñaby, the owner, does not like the way refrigerators affect the flavor of food after long periods of time. Believe me, the food tastes fresh and homemade. She prepares food every day beginning at 5 am to ensure everything is fresh as can be. You can hear her grilling or sautéing as your food is being prepared. Her daughter Elian explained the ins and outs of the restaurant and shows she has great knowledge about food.
I ordered the Morisqueta which has a very complex flavor profile. It involves a bed of white rice which has a flavor to it imbued by garlic, which is covered by beans, caldillo, cotija cheese and pork ribs. The caldillo is a freshly blended tomato sauce impregnated with chile. The original version is very, very spicy but she moderates the spiciness to perfection in my opinion. It is spicy enough to give the food a pleasant zing, but never burns your tongue so as to deprive it of flavor. I grew up on Morisqueta and this version of it is amazing. Few can do it this well in the United States.
Another dish that is hard to find in the United States is corundas. They are like tamales but they have a different shape and have a different consistency. They usually are not filled. They serve them with caldillo and cheese atop them. Their corundas are incredible. They are a must try food!
The Cecina they use here is imported from Michoacán. It is made by an elderly man. It is a long standing tradition from Tierra Caliente! It is very good and extremely unique! You will get a chance to savor tradition that goes back many decades. Cecina is a dry meat. It is not quite as hard to chew as a jerky and has a better natural flavor. It’s relatively thin so it can be chewed easily. The technique used by the elderly man is based on tradition and requires much knowledge. He does not compromise when it comes to quality! They serve both dry and “fresh” cecina. Fresh Cecina looks more like a steak than a jerky but it’s a dried beef just the same.
I also had an agua fresca de tamarindo or tamarind water. Really good and absolutely natural.
Dessert was Jerez. It’s rompope atop Jerez gelatin. Rompope is a nog with a tiny bit of rum. Jerez gelatin tastes of grape. Delicious!
