El Taller de Billy Sazón was hands down one of the best culinary experiences I’ve ever had. Starting with the food, each course and wine pairing told a story about Costa Rican cuisine, joining flavors and ingredients I had never tasted before. Each dish is a surprise, and prepared in front of you by an INCREDIBLE staff. Billy himself is also such a treat and culinary master in his own right. I would 100% recommend visiting this restaurant on your next trip to San Jose, it is truly Michelin quality cuisine and an experience you will never forget.

A truly wonderful experience. Billy and his staff are extremely honest, have a high level of expertise and they are very ambitious. Let me talk about the food. We had the 12 course menu which is supposed to tell about the culinary scene of Costa Rica. Each course was perfectly matched, very well seasoned and the ingredients were prepared and served with perfect cooking point and temperature. The only course we didn’t like was the white chocolate with a filling made with penicillin. It’s a matter of taste and the other guests liked it. The beef soup and pork belly are particularly memorable. Deep flavours, bolt and perfect seasond. The wine selection also was very good. We tasted the first red vine who got produced in Costa Rica ,extremely tasty. The pumpkin ice-cream was smooth and creamy …my wife didn’t drink alcohol so she got a couple of beautifull non alcohol cocktails. I am.a master cheef and I know how much effort, time and knowledge is in this kind of food All together absolutely worth the money and time. Thanks to Billy and his team ..

We came for our 10th wedding anniversary and it exceeded all expectations! Each course was imaginative and delicious. By the end of 12 courses I was ready to burst and my husband was actually satisfied, something that doesn’t usually happen for him after tasting menus. Three hours flew by as we enjoyed each scrumptious course and met chef Billy and his sous-chef Lilly. The care and preparation put into each dish is obvious and every detail is perfection. My chef husband left feeling so inspired and excited from the delicious creativity served to us. The wine pairings add another layer of depth, complementing each dish and leaving us increasingly chatty The atmosphere is private and casual but with soft lighting and plants hanging around simple yet elegant furniture, it creates an atmosphere of relaxed, exclusive elegance. Billy’s wife, Alejandra, was patient and reassuring when there was a glitch with our reservation: she is obviously a force behind the scenes helping to create a truly complete experience. I cannot recommend this enough, especially to celebrate a special event as it really is something we will remember our entire lives. They even gifted us a potted succulent with “Happy 10th Anniversary!” Thank you so much to Billy, Alejandra, and Lilly for creating such a magical experience.

Wow, what an amazing experience. Every dish was absolutely delicious. Everything was perfect and Billy and his team were so happy and proud to share their dishes with a lot of mystery to each dish. Billy explained that in most fine dining restaurants they tell you what you’re eating when serving it but his way is to allow you to eat whatever and then tell you so it was a fun way of guessing what you’re eating. Billy is having a menu that will be only served to 200 seatings in September 2025, so it was so amazing I’ll be flying back in to Costa Rica to experience that meal. He’s makes magic in the kitchen. I was just at a 3-star Michelin restaurant in San Diego and he’s on par with that restaurant and I even can say that his meal and his flavors were more my taste. Don’t miss out on this experience and wonderful meal. Thanks and I’ll see you again, soon!

Everything was amazing. The restaurant is in a residential part of town with no sign, but they sent the location and photo of the front before hand. It was a awesome vibe and on a Friday there were a total of 8 diners – all day around a bar with the kitchen in full view. Billy & the two women helping (I’m so sorry I can’t remember their names ) were all so attentive, welcoming, & explained everything wonderfully. The wine, food, homemade digestive were all delicious. The food was incredibly reflective of Costa Rican cuisine and my tico husband got emotional multiple courses because of how strongly it reminded him of his childhood and family dishes. The dishes were cleverly broken into 4 sequences that each had a wine/drink pairing. I was just barely to finish the last course even though I think it was my favorite! And the ceviche – something I normally can’t eat because I don’t like the fleshy texture was delicious! It was cut fine enough that every bite was balanced with the other ingredients and I never felt weirded out with the texture! The techniques were so clever and explained thoroughly. Just a wonderful experience through & through.
